Gramma Bertha's Banana Cake

Wow. This cake is flavourful and moist. I added four bananas, 1 t. brandy extract, 1 t. cinnamon and 1 t. ground flax. (the flax is for added nutritional value not flavour) This cake could be made with grated carrots, raisins, just about anything in addition to the banana. I am making it again tonight for dinner guests and plan to serve it with brandy whip cream. What a great way to use up those expired bananas!

Peanut Butter and Banana Smoothie

Oddly my 7 year old was not a fan of this smoothie. I would use vanilla yogurt next time and less peanut butter.

Ginger Glazed Mahi Mahi

Ohhh this is good! I doubled the sauce and cooked the fish on the BBQ using foil as previously recommended. My 6 year old son gobbled it up! The sauce would be good with chicken or pork but be sure to make extra!

Bright Blue Monday Cake

Very tasty cake although a bit dry. I used 2/3 Splenda, 1/3 sugar plus the recommended 1/2 t. vanilla. I would suggest adding 1/2 c more blueberries and serving warm with vanilla ice cream.

Picante Marinated Chicken

I like the simplicity of this recipe. I found it a bit bland but would punch up the flavour next time with dried peppers and a bit more Dijon. Thickening the sauce before the final step would help it to adhere to the chicken.

Fresh Blueberry Pie II

Quite tasty although it absolutely needs time to set up or you will have a soupy blueberry mess. I tried it with .25 t of vanilla and almond extract. Next time I would omit the almond extract but keep the vanilla. I really enjoyed the combination of cooked and fresh berries. Marvelous with vanilla ice cream. Reducing the sugar will help the the naturally sweet flavour of the berries stand out.

Spicy Sweet Potato Salad

Not perhaps a fair assessment as I made this without the jalapeno and with less curry. I added hardboiled eggs and bacon but with the jalapeno pepper the flavour of these would be lost. I did not enjoy the texture of the sweet potato although the other potatoes were wonderful. Next time I would increase the curry, omit the sweet potato and try it with yams. I would also reduce the lemon and add a few tablespoons of white sugar to compliment the heat of the curry and pepper. This is best prepared a day in advance to let the flavours blend.

Grandma's Sour Cream Pound Cake

This recipe turned out beautifully. I made a few modifications by omitting the mace, doubling the vanilla and adding 1 tsp of lemon extract. I also lowered the temperature 25 degrees. The cake was golden yellow without a crust and very moist. I would recommend using lemon zest instead of lemon extract.

Seafood Lasagna II

I made a few adjustments based upon previous comments and my family preferences. I used 4 oz less Alfredo sauce because the jars weren't the recommended size. The Alfredo sauce was garlic flavoured plus I added an extra garlic clove. To compensate for the lack of Alfredo sauce, I added 2 cups of whipping cream. The seafood I added was lobster, crab and scallops although next time I would skip the scallops because they didn't add any flavour. I also used two cups more cheese than called for. The extra cheese and whipping cream made the lasagna moist but not runny after resting out of the oven for 6 minutes. The next day the leftovers were still scruptious and had a wonderful texture. I would recommend adding chopped spinach for some colour because the dish did look anemic. My brunch guests were suitably impressed with this lasagna and I would certainly recommend this recipe.

This was flavourful and moist. Next time I would probably layer the ingredients as the rolls came out oddly shaped. Perhaps that was due to overzealous flattening.

Herbed Mushrooms with White Wine

A wonderfully yummy and easy accompaniment to steak. Remember that the mushrooms lose a lot of volume during cooking so be sure to start with far more than you think you'll need.
