Eggplant Tomato Bake

We had leftovers so I cut them up into in bite size pieces and added it to a whole jar of traditional pasta sauce and simmered. The flavors of the the ETB infused into the sauce and came out wonderful!

Chicken and Dumplings III

MMmmmmm, so easy and this one is a keeper. I used 1 can cream of celery and 1 can cream of mushroom, used chicken breasts and chicken stock. Cooked dumplings 10 minutes covered, 10 minutes uncovered. Wonderful and warmed the belly!

Chicken Marsala

Delicious! I made two modifications: I didn't use sherry and I added extra marsala wine and then a "slurry" of cornstarch/water mixture suggested by other poster. Absolutely delicious. Next time there will only be one change....I will use more salt on the chicken breasts. Thanks for the recipe!
