Burgundy Pork Tenderloin

This is my first recipe review on this site and this was pretty good- but I did follow the other reviews and only used 1C red wine and 1C beef broth. For some reason I could still taste the powdery garlic powder so next time I'm just going to use regular garlic. I did need to use a bit of corn starch to get the sauce to thicken a bit since we are more gravy people than sauce people.

Cornflake Slice

Okay- after reading review after review, I would have to say that these are pretty good, I did the 1/4 c butter and added Vanilla- but did anyone notice that they did not really say when to add the COCONUT- which in my opinion is a big part in this recipe, so I added it when the marshmallow was melted- speaking of which- I only had on hand miniature marshmallows so I just did a 4 to 1 ratio- and I think next time I will do 6 to 1. I didn't have sliced almonds so I didnt use them. I used a square pan and they still seem pretty thin- no way will this fit on 9X13 or you will get a one cornflake layer. I did half plain and put it in the pan- then I added chocolate chips and put the remainder in the pan because my young son will not eat chocolate- strange but true. ENJOY!

Sugar Cookie Cutouts

This was a pretty good cookie recipe! I didn't have Heavy whipping cream so I used 5% cream. I did not over cook it- rather I undercooked it- 10 min. max so that the cookie would be a little soft. I did what someone suggested- rolled it out on parchment and then slide the paper on cookie sheet. I didnt get 6 dozen - I got about 3-1/2 dozen, if that. I also with held some of the doe rolled it like a log and plastic wrapped it and put it in the freezer for an hour- then sliced it and baked it and it turned out great! The cookie rose nicely and will be easy to frost it and decorate it. My 2 sons loved it! No need to buy them at the store!!

Pecan Turtle Bars

After reading all the RAVE reviews, I decided to make these....well the bottom was so hard! the "carmel" center melded with the crust and it became one candy mass. After a bite I thought I'd have to see my dentist.....I followed the directions and made the changes that everyone suggested, and so I'm extremely dissapointed. Excuse me now, I must pick out the hard crust out of my teeth.

Chicken with Green Peppers in Black Bean Sauce

I'm glad that I did not add any salt to this- this is very salty- in the black bean sauce there is a whopping 1120mg of sodium so you can skip the salt and the soya sauce in my opinion. If you don't like salty dishes you won't like this. Also I only used 3 TBSP of the Black Bean sauce and it was just fine- served on a bed of Basmati rice and I used 2 very big chicken breasts and it was good enough. From start to finish it took an hour- its the prep. that took most of the time. Also I only used 1 tbsp of corn starch mixed in with a 1/2 c of hot water- and it concistancy turned out perfect. I'm not sure if I'll make this again- I have alot of black bean sauce left that will most likely sit in the fridge for a long time. :-(

Easy Roasted Pork

I'm not sure how to rate this- I mean- I do enjoy sweet meat- like honey garlic or hoisin sauce- and I really really wanted to like this recipe after seeing so many great comments. I didnt have a bag but I did use a covered baking dish- and I didn't use "Sarah's Applesauce" either I just added some cinnamon sugar mix I had on hand, and the problem was not the applesauce- I had a fairly small roast so I thought it would only take an hour to make but in my convection oven it took 2 hours to reach the 160 degree reading. I did use a small amount of cornstarch to thicken the apple sauce after removing the meat and like I said, there was nothing wrong with it- I guess it just didnt tickle my fancy.

Creamy Chocolate Frosting II

I did make a few minor changes after looking at a few chocolate frosting recipes. In a saucepan over low heat I used 2 TBSP margerine and 1 TBSP shortening- (this makes it shiny) and then I used 1/2 C evaporated milk ( this is leftover from the coconut chocolate cake that I made) and 2 TBSP cocoa and 1 cup of 50% cocoa dark chocolate chips to give it a dark rich taste- just a splash of vanilla extract- then I added the confectioners sugar about 2 cups- since I wanted to make it into a glaze I wanted it runny and I poured it over the Coconut Chocolate Cake 1. VERY YUMMY!!!

Kolaches From the Bread Machine

I served this to some guests after dinner and they all seemed to like it- it turned out a little puffy but it did taste great! I had some freezer peach preserves in the freezer that I served with this and it went well together. Did not put powered sugar on it- I didnt think it needed it. Maybe next time though.

Panettone Bread Pudding with Spiced Orange Sauce

I made this January 1 and it was sooooo good! Here are the changes that I made- 2 TBSP of sugar only- people- you dont need to use a ton of sugar! 2-1/4 cups 5% cream because I didnt have half and half, I used 1 TBSP orange extract because I didn't have Grand Marnier or other, ground cloves instead of nutmeg, no orange zest either, and no butter on top- but I did need to use and extra egg- cooked this at 350 for 1-1/2 hours without using the hot water bath method and it turned out fantastic!!!

Oatmeal Strawberry Bread

You don't need to use so much sugar or oil. But I did make a few changes to make a healthy version of this bread. ok, here we go......Step 1: Mix 1 C miracle whip and 2 TBSP of sugar and 2 TBS brown sugar and one egg beaten. after mixing this together add cinnamon. then mix. add sliced strawberries ( I only had 8 on hand so then I also added 1 C strawberry jam.) add 1 TBSP of oil ( I only added this for good measure but next time I aint going to) Mix this altogether and now Step 2: add 1 C oats, mix. 2 C flour, 1-1/2 tsp baking soda and 1/2 tsp baking powder. Pour into greased pan. I used a round Wilton pan size 10X3. This turned out to be very moist! I dont even think I'm going to use any sugar or brown sugar next time.

Mexican Rice II

I've never had mexican rice before so I was not sure what I was expecting. My children didn't like it- and my husband didnt like it- and I know what it was, it was the CUMIN! they just dont like the taste of it- its ok becuase I did like it. This was pretty easy to make but I'm not sure if I'l make this again.

Best Black Beans

I've never had Black Beans before and the only mexician style food I've had is Taco Bell- Hey I'm Canadian there is NO authentic Mexican restaurants here peeps! But I found this really dry- I rinsed out the black beans out of the can and added the rest of the ingredients exactly as written, but I couldn't get my son to eat it- so word of warning- this is not children fare.

Quick and Easy Mexican Chicken

I overcooked it- woa woa woa. serves me right trying to make this and mexican rice and best black beans all at the same time. other than that I made no changes and its a good thing that whenever I make a new chicken dish I like to make a seperate pan of shake n bake incase it didnt turn out- go figure they prefered the shake n bake instead. why do I even bother. sigh.

Coconut Chocolate Cake I

WHOA! Yes yes yes! A hit! A winner! This was amazing! the changes that I made: I only used 1/3 C sugar. BTW 14 oz. of coconut is translated to 1-3/4 and I used UNSWEETENED. I used Creamy Chocoate Frosting to glaze this please read my review on that because I made lots of changes to kinda fit this and that. I dont know people I'm new here! LOL!

Baked Asparagus with Balsamic Butter Sauce

This was fantastic- I tasted it when I took it out of the oven and it was great- then I added the other ingredients and I have to admit that I prefered it without the balsamic vinegar and soya sauce. Next time I will just pour a bit of melted butter and thats it.

Potato Casserole

Wow! awesome! These are the changes that I made, first I sautee the onion plus I added a clove of crushed garlic. then I mixed in a bowl the mushroom soup with the cheddar cheese and 2 TBSP of milk- NO sour cream- then I mixed in the hashbrowns ( I try no to get the tiny tiny ones but a more larger size hashbrowns) and then I just mixed this all together and put it in a greased dish. On top I sprinkled Italian seasoned breadcrumbs and this was amazing!! NO NEED FOR 1 CUP OF BUTTER!

Drop Biscuits and Gravy

This is exactly what I thought it would taste! This was amazing! I had refridgerator biscuits and then I made the gravy- I only used 2 large casings of sausage since it was just me and the kids eating tonight- but next time I will add one more....then I did everything else according to directions- the only thing is next time I will NOT add salt because I find the sausage is salty enough.

Sesame Parmesan Zucchini

Really really excellent side dish- I used vegetable oil instead of olive oil, I didn't add cayenne (Kids) and I used a touch more oil- when I got it on the baking pan I sprayed some oil on it using the oil pump from pampered chef- can't stand PAM, sorry, but tastes like plastic. anyways this was very good and I will make this again!

Mom's Zucchini Bread

EXCELLENT! But I did make a few changes because I don't like to use so much sugar and oil- so this is what I did. In a bowl- beat 2 eggs, 1/2 C sugar and 1/2 C brown sugar, 2 tsp vanilla, 1/4 C miracle whip, 1/2 C oil and 2 cups grated zucchini. Then sift in the bowl 2-1/2 C flour, 3 tsp cinnamon, 1 tsp salt, 1 tsp baking soda, 1 tsp baking powder. Mix together then I greased a round 10X3 wilton pan 350 for 30 min- PERFECT!
