About this Cook
I'm crunched for time in the evenings, but want my daughter to have 'homecooked' meals. Right now I'm starting with 'Sandra Lee Semi-Homemade' type dishes, but hope to expand my menu options as I become more comfortable in the kitchen.
My favorite things to cook
I'm trying to 1) learn how to cook the old favorites and 2) learn how to cook new things. We would like to become comfortable enough with cooking to be able to host get-togethers without relying completely on cookbooks. Right now, I've got about 5 meals down - too few to rotate throughout the month lol.
My favorite family cooking traditions
I loved baking with my mother as a child, but didn't end up cooking much with her as we grew older. I hope to cook & bake with my children throughout their years growing up, that they can be one of those people that just 'knows how to cook.'
My cooking tragedies
Once, i was making one of those frozen pizzas at a boyfriend's house (when we were just starting dating)... when it was done, we had a hard time cutting through the pizza. I forgot to take the cardboard out from under it. Shows EXACTLY how foreign the kitchen was to me as a child.

Slammin' Salmon
just okay. would probably use the recipie as a base for another marinade, but would not bother making exactly as described again. I let marinate for 24 hours, and flavor was good - just not, out of this world.

Balsamic Chicken and Fresh Mozzarella
really easy. I overmarinaated (3days) so the balsamic flavor was a bit mutch), other than that it was pretty good. I only rated 4 stars because it could use more flavoring (seasoning, herbs, spices), but too much would defintaly take a way from the simple flavor. I just think the fecipie could use a bit *just a little* tweaking, but has potential for 5 stars. i used mozz. slices and baked the breasts for 20 minutes, then put a small amount of shredded cheese atop the tomato so the basil had something to stick to. (adding the tomato and basil for an additional 3 minutes) I attempted to brown my breasts prior to baking, but the step is unnecessary.

I served this to three people (incl. myself). two gave it 3.5, one gave it four. tastes pretty good but presentation is not so hot.
