Grilled Balsamic and Soy Marinated Flank Steak

Very good, but still doesn't reach the level of my mother-in-law's, which is the reason for the 4-star rating. I did, however, like the contrast of the balsamic; I think it really stood out in the dish, in a good way. This is easy to throw together and will probably make again. It's a healthier alternative to those flank marinades with brown sugar.

Stuffed Peppers with Turkey and Vegetables

Will be used on a 30 day cut diet. No need to wrap peppers in foil during initial bake. Didn't add zucchini and used leftover spaghetti sauce (about 6 oz.) instead of tomato paste and diced tomatoes. be sure to add a good amount of Italian seasoning and salt to give enough flavor.

Zesty Quinoa Salad

This was fantastic as far as quinoa recipes go! Will use this on a 30 day cut diet. Didn't have limes, so subbed a few drops of lemon juice (as it was all I had). I cut the cumin to about 1.5 tsp. I forgot the tsp of salt, which I'm glad I did--a few dashes at the end, and it was salty enough. I didn't add the cherry tomatoes and they weren't missed. I also sauteed some white onions, which I subbed for the green onions. My cilantro wasn't fresh, so I used dried which I'll do again next time.

Chicken Sweet Potato Skillet

My husband and I are about to endure a 30 day cut diet, so with a few modifications, this will be one of the recipes. I toasted slivered almonds, used ground sage (about 1 tbsp); used three thinned chicken breasts and substituted one apple (which will likely fall out once the diet starts, though shouldn't alter the taste greatly). Also, if you don't add some olive oil during the browning of the sweet potatoes, they will get destroyed.

Famous Butter Chicken

That amount of butter isn't necessary, so I drastically reduced. Prepared according to directions otherwise. I made three chicken breasts, utlizing about 2-3 tbsp of butter total. My husband said this was better even days afterward. Will make again.

Braised Corned Beef Brisket

Really good also on sandwiches the next day. I didn't have Browning sauce, so I just added a honey mustard mixture to taste on top before cooking. I also added some celery and carrots the last two hours of cooking.

Slow Cooker Latin Chicken

I made quite a few changes, but it was excellent regardless. I used chicken breast, and also skipped the sauté step. I used dried cilantro; skipped the salsa and mixed in a packet of taco seasoning with the chicken broth. I added frozen corn. Because of the taco seasoning, I didn't add the cumin or allspice. I just added in fresh minced garlic. Only used one can of beans. Will make many more times with these changes.

Fresh Asparagus and Chicken Casserole

This was pretty good and tasted better the next day. I doubled the chicken, and used a 9x13. I also added mushrooms, which I sauteed first. In place of the chicken stock, I used 3/4 c of chicken brother and 1/4 c of white wine. I subbed about 1 c of the sour cream with cream of chicken to reduce fat content. I also had very little parm, so I sprinkled in cheddar which worked just fine. I also sprinkled crushed stuffing crumbs on the top. I used thin egg noodles.

Roasted Broccoli

The steak seasoning and Chili powder, in the given proportions, was overwhelming. If I make it again, I'll drastically reduce the proportions, and probably just stick with the Montreal seasoning. 15 minutes was also too long.

Marinade for Chicken

Excellent. We let this marinate for 3 hours and made 8 servings for one package of chicken. I substituted prepared mustard for dry, using a couple tbsps of it. Grilled the chicken.

Slow Cooker Chicken Pot Pie Stew

Even better the next day. I made some biscuits as a side to the stew. I omitted the garlic salt and replaced with fresh. I only used two buillion cubes and celery seed instead of celery salt because it's what I had.

Beef Tenderloin in Creamy Porcini Sauce

I didn't use porcinis, so I just sauteed the bella mushrooms as I normally would. I substituted half and half for the heavy cream, and cut and essentially diced the potatoes, otherwise I thought they might take much longer than the meat to cook. I did add some cornstarch to the mushroom mixture, but not sure that was necessary. I roasted for 20 minutes, then realized the beef was not done, however 10 more minutes was too long. Next time I will do 23-25. Thanks!

Marinated Flank Steak

Pretty good and nothing unhealthy about the marinade. I'd probably say the marinade I typically use with brown sugar has a bit more flavor--for that reason alone--but this definitely fits the bill when you're looking to cut sugar out as often as possible. I broiled these in the oven, and probably at 8 min. per side.

Banana Banana Bread

I didn't feel it needed any extra spices? However I did include 3/4 c of chocolate chips and a mixture of 3 tbsp of Brown sugar and 1 tbsp water drizzled on top. Baked up beautifully. Only required ~55 min in my oven. Def will make again.

Navy Bean Soup I

This is really amazing. I did not add the ham, or the tomoatoes, and the flavor was perfect without. I did add carrots, and sauteed them with some garlic, onion and celery first. I dumped in the remaining ingredients as suggested and simmered for the prescribed time. I did not need the extra 3 cups of water at the end, either. I stored this in the fridge and ate it the next day. Really, truly, a keeper!

Awesome Slow Cooker Pot Roast

I added in some cut potatoes, carrots and celery. The cream of mushroom and onion soup creates a gravy, which gives this roast more flavor than most.

Pork Tenderloin with Creamy Dijon Sauce

This was delicious, and this type of recipe helped avoid the dryness usually accompanied with a pork tenderloin. I only had cream of celery, so I substituted with that. Still tasted great. Next time, I'll up the dijon as the flavor of it was not pronounced in these proportions.

Slow-Cooker Tex-Mex Chicken

Fantastic. Followed recipe closely, except for substituting canned corn. Will certainly make again and again. I served over rice, but this would make a great filling for a burrito, or served over noodles. It would also be a great medium for hiding quinoa.
