I substituted 1C panko for the bread, 1T onion soup mix for the bouillon, and nearly ground the onions in the food processor (mainly because my daughter kept pushing the button), which kept out big chunks that could make it fall apart. I only put in 1T lemon juice because I was afraid it would be too citrussy, but you couldn't taste the lemon (or the soup mix) at all. I also used a beef/pork/veal mix for the meat. It was really delicious! Even my extremely picky 13-year-old gobbled it up. The glaze was wonderful and there was a lot of it. I think next time I would make the whole batch, and heat up the excess and serve it to spoon over the meatloaf. I have tried dozens of meatloaf recipes over the years, and this is one of the best.
