Pork Chops With Black Cherry Sauce

Very nice change of pace to ordinary porkchops. Liked the cherries mixed with the wine. Didn't have beef stock, but did use the drippings from the baked chops which seemed a good substitute.

Seafood Chowder

Made this yesterday, and it was delicious. I had most of the ingredients, except for the clams (next time) and cream cheese (used half & half instead), and I substituted vegetable stock for the soup. I did add one important ingredient: turkey bacon bits (less fattening) -- the taste is a necessary step in many chowders [imo]. Also added fresh sliced mushrooms and chopped celery. I prefer to sauté my garlic and vegetables in butter for a few minutes prior to adding the liquids, adding to the flavour. For sure I did make changes from the original recipe, but this is definitely my new base starter for future chowders. Thanks!

Broccoli with Garlic Butter and Cashews

Very good side dish. Tried it as original with broccoli, or substituted for green beans, and both work well. The sauce can seem a little runny at times, and always a bit too much, but never a complaint from anyone on how good it tastes.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This was delicious! Only thing I didn't add was the red lentils (forgot to buy them) – but it was so tasty just the same. The suggestion to use a stick blender works very well, and you only need to puree as much (velvety) or as little (chunkier) for consistency as you want.

Butter Schnitzel

Delicious. I did have to alter slightly, lcaking some ingredients, substituting others.: used saltine crackers, not bread crumbs, along with cornmeal; red not white wine, but still was really good. Will try this again with all the right stuff, and it will surely be just as good!

My grandmother had a similar recipe, but white flour only. I tried this recipe with an Alexander Keith's Red Amber Ale... and it was just as good, if not better than Grammy made!

Chicken and Mushroom Saute

Quick & easy. Recipe would allow for added vegetables (I had some zucchini & carrot from my garden.) I used fresh sliced mushrooms instead of canned and it turned out great!

Pasta with Scallops, Zucchini, and Tomatoes

Healthy and tasty. I had to make a few changes due to what was on hand: salmon instead of scallops, and whole wheat spaghettini instead of fettucini. I did cut down on the serving for pasta, put enjoyed this meal with a tossed salad, and glass of red wine. Recommend!

Best Fried Green Tomatoes

First time making and even eating fried green tomatoes, and these were the Bomb! Ha! With leftover tomatoes from my garden, I was able to create a nice side dish for dinner. The recipe was easy to follow, but I did substitute whole wheat flour and (peanut oil – all I hand on hand) and they turned out nice and crisp on the outside and juicy on the inside: Perfect :-)

Homemade Pancake Mix

No complaints at all - in fact these were super delicious! Had no trouble with the ingredients, they weren't dry at all. Perhaps the previous cook combined all ingredients listed, intead of keeping in separate portions as instructed. I will definitely be making these again. Thanks!!!

Bubble 'n' Squeak

A truly great and nutritious recipe. It even allows for some substitution. I didn't have bacon, but did add maple smoked sausage and a little less ham. The suggestion from another reader for pre-shredded cabbage was perfect. I picked up a bag of mixed coleslaw - without the dressing - and it was excellent. Thanks for the recipe

Washabinaros Chili

This has been a fun recipe to try. It has a lot of punch, good combination of flavours. Worth a repeat. Some changes: I did need to add cornstarch as another suggested. I had my own hot peppers growing in the garden - even more potent if possible! I have added 2 cups of kernels of corn, to make this into a more complete meal. I didn't have enough brown sugar, so added 2 tbsp of maple syrup (the real Cdn thing). Thanks for posting the recipe!

Cheesy Sausage Zucchini Casserole

A terrific combination of ingredients, but a recipe that did allow for a little room for changes: I substituted the pork sausage, for boneless pork chops, as the bottom layer of the casserole dish; and as I'm not a fan of processed cheese, I used cubed provolone and Monterey jack, instead, with a little shredded provolone on top. Otherwise it was as is in the recipe, a great way to cook with ingredients from my garden, and a fantastic addition to my recipe box! Thanks!!

Pasta with Spinach Pesto Sauce

It was quite easy to make, which made it that much more fun to prepare. A surprisingly tasty dish, with no hint that it was so "nutritious" (i.e. tofu as an ingredient.) I passed it along to my Mom & Dad it was so good!
