James Gang Red Velvet Cake

Reviewed: Oct. 30, 2011
This cake is amazing! I am always looking for recipes that can be easily modified to be "dairy free", so my milk allergic 4-year-old does not have to hear for the hundredth time that he cannot have something. I substituted a combination of vanilla soy milk + 1 tbsp lemon juice for the buttermilk in the cake and followed everything else exactly (except for using 1 oz of coloring instead of 2- still plenty red). I also substituted vanilla soy milk for the milk in the frosting, thickened up great and mixed in nicely. Thank you for this recipe!

Classic Goulash

Reviewed: May 26, 2011
This is a great recipe, but for a normal sized family, I would recommend halving it. I did not have any italian seasoning, so I used part of a packet of italian dressing mix, and it worked great. Be careful when you add the salt because the soy sauce and seasoned salt may make it unnecessary. This is a great recipe for my picky eaters. I can add cheese on top when I serve it for those who want it, but it is milk free for my little guy that is allergic. Thanks for posting!

Oatmeal Pancakes II

Reviewed: Sep. 26, 2010
I tried this recipe for an alternative to the same old Bisquick pancakes. I like that is uses ingredients that I always keep on hand. My son is allergic to dairy, so I substituted vanilla soy milk for the buttermilk, and it worked great. I used a hand mixer, and the batter came together easily. It seemed thin, but the pancakes puffed up perfectly and with a great consistency. I will try applesauce next time. Great recipe!

Rye Beer Bread

Reviewed: Dec. 2, 2009
I'm note sure what I did wrong, but my bread never rose. It could have been a yeast problem or a temperature problem. I used Guiness Extra Stout, and the flavor was strong, but good. The bread was obviously too dense, but still edible. I may try again.

No Bake Cookies III

Reviewed: Oct. 14, 2009
I altered this recipe to make it dairy free for my son who is very allergic. I substituted butter flavored shortening for the margarine and vanilla soy milk for the milk in the same amounts. I made it according the recipe otherwise and they turned out great. Almost as good as the original. Set up great and everything. Thanks for the recipe!
