Coconut Shrimp I

Reviewed: May 25, 2008
I made everything as stated in the recipe (except I used water instead of beer and didn't chill them at all) with 18 Colossal shrimp and it was AMAZING! Thanks so much for sharing this wonderfully tasty dish.

Funnel Cakes IV

Reviewed: Apr. 1, 2010
I thought it was great as is. We preferred adding a little vanilla to it, though. But as written (cut to 4 servings) it was great as well. Thanks!

Chunky Monkey Pancakes

Reviewed: Jun. 16, 2010
Really great pancakes. It really does make 9 when using 1/4 c. measurements. I put 2 bananas in instead of 1 (my only variation) and it wasn't too chunky. Great for breakfast for dinner meals.

The Best Chicken Fried Steak

Reviewed: Dec. 13, 2010
Very delicious! The taste was great and not overwhelming. Put a piece of plastic wrap over the steak when you pound it out; it helps things stay neater and off your clothes.

Baked Ziti II

Reviewed: Dec. 13, 2010
SO DELICIOUS! I use 30-32oz Ricotta cheese (we're fans) and sometimes put browned ground beef in--but it doesn't need it. So good for company--I always get "wows".

Skillet Pork Chops with Potatoes and Onion

Reviewed: Dec. 13, 2010
I would leave the potatoes cut a little thicker, as well as the onions. The thicker the ingredients, the longer cook time, yes, but also the better texture. I usually make ours in a large pot which works just fine.

Taco Seasoning I

Reviewed: Dec. 20, 2010
Made exactly as written. Makes about 3-3.5TB. I used 2.5 level TB in my 5-bean taco soup. Very delicious. Great flavors. I'll definitely keep this recipe handy.... and may just stick with it instead of buying pre-packaged taco seasoning. Thanks, Bill, for sharing!

Excellent carne guisada. A little saltier than our usual dishes, but definitely added to the meal rotation. Thank you!

Italian Grilled Cheese Sandwiches

Reviewed: Mar. 9, 2011
Didn't use the marinara sauce suggested, but the grilled cheese itself was made per-recipe. Delicious! So simple that I was a little ashamed I hadn't thought of it myself--but so good! Definitely a keeper for grilled cheese and tomato soup dinner nights. Thanks for sharing!

Oreo™ Cookie Bark

Reviewed: Mar. 9, 2011
Made this for a Thanksgiving get-together with family and everyone loved it. My husband said it's better than Hershey's Cookies and Cream candy bars. Don't crush the cookies too much or else you get more powder and not as much cookie. Super easy to make and a crowd pleaser. Thanks for sharing!

Chicken Puffs

Reviewed: Mar. 9, 2011
Very delicious. I added 3/4 tsp of dried oregano, but I didn't taste a difference. Didn't need it anyway. The onions and minced garlic were perfect. Not too cream cheesy (and I'm not a cream cheese fan). The crescent dough is the perfect shell for the filling. This has been added to our menu rotation. :) Thanks!

Baked Potato Soup III

Reviewed: Jun. 15, 2011
So much better than the half milk half chicken broth potato soup I made before! Rather bland and floury-tasting without the cheese and sour cream, but the with it--man! Delicious! It's a thick, creamy, rich soup. Perfect for chilly and/or rainy days. I used the leftover bacon drippings and supplemented some margarine with olive oil to make the 2/3 c. butter. I also microwaved the 4 potatoes then peeled and cubed them and that worked perfectly. So quick and easy, love it! Thanks!

Indian Chapati Bread

Reviewed: Oct. 15, 2011
I was a little nervous about the whole wheat flour making the chapati grainy, but it wasn't! We let it stand for 30 mins before cooking. Very delicious with the cranberry bean curry my friend served and the Cucumber Raita found on allrecipes.com. Definitely a keeper recipe.

Microwave Bread and Butter Pickles

Very good. I don't like jarred bread and butter pickles, so this was a gamble for me. Made it exactly according to the recipe and loved it.

Spicy Black Bean Cakes

Reviewed: Mar. 16, 2012
Too spicy for our 4 year old, but my husband and I loved this recipe! I followed it as written and the cakes turned out moist and flavorful. We didn't have any trouble at all with the sweet potato being hard/undercooked. The 1 egg seemed to bind the mixture well enough. The sour cream mixture was superb with the cakes--definitely try it as well. Excellent new recipe that will made it to the dinner table regularly from now on. Thanks! **Note: I used 2 semi-large sweet potatoes (grated them in a food processor) and they yielded 6 cups. I froze the extra two 2c measurements and hope they will use well next time I make the cakes.
