A helpful hint: 7/8 c. butter is 14 TB. (or 1/2 c. + 6 TB). I didn't have almonds on hand, but put in about 1 tsp imitation almond extract and it was delicious. If your mixture looks more like crumble than dough after combining everything, that's ok! When you go to squeeze and shape the kipferls, the crumbs do turn into dough. Very delicious. I can't wait to share these with my mother-in-law who loves kipferls! Thanks!

Nikki's Steak Saltimbocca

I was first a little hesitant to make this dish because I thought 4 ingredients meant bland taste. But not so at all! I couldn't find prosciutto so I ended up using Canadian Bacon and it was amazing! The fresh sage adds so much depth of flavor to the dish. (And the fried leftover sage was a great garnish.) I used round steaks and pounded them to the appropriate thickness and they turned out great. Thanks so much for sharing this recipe!

Spicy Fry Sauce

Fantastic! I was missing Utah/Idaho during lunchtime so I made myself some oven fries (with dried rosemary, olive oil, and coarse sea salt) and whipped this fry sauce together. My 4-year-old and I LOVE it! Great flavors. Oh, and I took the suggestion to do half BBQ and half ketchup and it turned out just plain awesome. In lieu of Some Dude's, this will more than do. :) Thanks!

Baked Potato Soup III

So much better than the half milk half chicken broth potato soup I made before! Rather bland and floury-tasting without the cheese and sour cream, but the with it--man! Delicious! It's a thick, creamy, rich soup. Perfect for chilly and/or rainy days. I used the leftover bacon drippings and supplemented some margarine with olive oil to make the 2/3 c. butter. I also microwaved the 4 potatoes then peeled and cubed them and that worked perfectly. So quick and easy, love it! Thanks!

Buffy's Refried Beans

Fantastic! Used butter instead of lard (no lard on-hand) and just the bean juice from the can. No salt. So, basically just 1/2 c. butter and 3 cans of pinto beans. DELICIOUS! I didn't know making refried beans could be so easy--and tasty. Thanks, Buffy!

Pumpkin Wheat Honey Muffins

I think they are good as is, but my husband and I both agree that it would be a 5-star recipe if it incorporated some bran. The recipe just screams for bran to really complete it. The flavors are good--the pumpkin and honey flavors are unique and delicious together. My husband thinks the muffins are super sweet, but I think they're just sweet. Will probably look for another pumpkin recipe with bran.

Easy Chocolate Chip Cookies

It's such a mind trick to eat these and remember that they're yellow cake mix cookies. We gave these to our neighbors who loved them and didn't believe they were made with yellow cake mix.

Spicy Black Bean Cakes

Too spicy for our 4 year old, but my husband and I loved this recipe! I followed it as written and the cakes turned out moist and flavorful. We didn't have any trouble at all with the sweet potato being hard/undercooked. The 1 egg seemed to bind the mixture well enough. The sour cream mixture was superb with the cakes--definitely try it as well. Excellent new recipe that will made it to the dinner table regularly from now on. Thanks! **Note: I used 2 semi-large sweet potatoes (grated them in a food processor) and they yielded 6 cups. I froze the extra two 2c measurements and hope they will use well next time I make the cakes.

Italian Grilled Cheese Sandwiches

Didn't use the marinara sauce suggested, but the grilled cheese itself was made per-recipe. Delicious! So simple that I was a little ashamed I hadn't thought of it myself--but so good! Definitely a keeper for grilled cheese and tomato soup dinner nights. Thanks for sharing!

Kaese Spaetzle

I only made the spaetzle from the recipe but I just wanted to say it was GREAT! I was a little worried about how potent the amount of nutmeg was but it turned out to be a great flavor in the finished dish. Thanks for sharing! Update: Made with whole wheat flour and it was a lot drier than the all-purpose flour spaetzle. But it was still pretty good. I also made the whole wheat spaetzle according to the recipe (with the butter, cheese, and onions) and it turned out so good! I may add more cheese next time, but that's just b/c my family is full of rats. :) Thanks again!

Light Oat Bread

Very delicious. Made by hand, mostly following "Jules"'s comments. The first rise I left the bread covered in the mixing bowl for 30 mins, the second in the 9x5 loaf pan I left covered for about 15. At 350 degrees for 35 mins the bread was perfect. It rose up higher than I was expecting, but that was ok with me. Though you can see the oatmeal on the crust, you can't see the oatmeal inside. The oats give the bread a delicious chewy texture. A really great bread--not too sweet, salty, or bland. And the crumb is perfect after cooling. A great addition to our bread recipe collection. This first loaf will actually be shared with friends--proudly. :) Thanks, LITSTER5.

Whole Wheat, Oatmeal, and Banana Pancakes

My family prefers this pancake over one with chocolate chips---so you know it's good! I didn't blend the oats, used them as is. Added some cinnamon just for the flavor. The pancake is pretty dense but super moist. Substituted same measurement of applesauce for vegetable oil. Be sure to use a very ripe banana. Used the 6 serving recipe and it made about ten 1/3c pancakes. Very delicious. Definitely a keeper--thanks!

Indian Chapati Bread

I was a little nervous about the whole wheat flour making the chapati grainy, but it wasn't! We let it stand for 30 mins before cooking. Very delicious with the cranberry bean curry my friend served and the Cucumber Raita found on allrecipes.com. Definitely a keeper recipe.

Honey Mustard Grilled Chicken

Followed the recipe exactly and it was amazing. We don't have a grill, so I pan-seared the chicken. The glaze on the outside was delicious while keeping the chicken moist and tender on the inside. Hubby, 4-year-old daughter and myself LOVED it. Thanks!
