Honey-Wheat Sunflower Bread

Spicy Black Bean Cakes

Too spicy for our 4 year old, but my husband and I loved this recipe! I followed it as written and the cakes turned out moist and flavorful. We didn't have any trouble at all with the sweet potato being hard/undercooked. The 1 egg seemed to bind the mixture well enough. The sour cream mixture was superb with the cakes--definitely try it as well. Excellent new recipe that will made it to the dinner table regularly from now on. Thanks! **Note: I used 2 semi-large sweet potatoes (grated them in a food processor) and they yielded 6 cups. I froze the extra two 2c measurements and hope they will use well next time I make the cakes.

Quick and Easy Chicken Noodle Soup

I thought this soup was ok. My husband and daughter liked it better than I did. I substituted celery seeds instead of celery since all three of us dislike the vegetable version. I used canned carrots. I add about 3/4 TB minced garlic. Also added about 1/2 tsp dried thyme. And salt and pepper to taste. I found the soup bland--should have used more salt, I guess. But I'll be keeping it since it was a hit with hubby and daughter. Thanks.

All-Day Apple Butter

Light Oat Bread

Very delicious. Made by hand, mostly following "Jules"'s comments. The first rise I left the bread covered in the mixing bowl for 30 mins, the second in the 9x5 loaf pan I left covered for about 15. At 350 degrees for 35 mins the bread was perfect. It rose up higher than I was expecting, but that was ok with me. Though you can see the oatmeal on the crust, you can't see the oatmeal inside. The oats give the bread a delicious chewy texture. A really great bread--not too sweet, salty, or bland. And the crumb is perfect after cooling. A great addition to our bread recipe collection. This first loaf will actually be shared with friends--proudly. :) Thanks, LITSTER5.

Pumpkin Pancakes

I used 1 whole can of pumpkin instead of the 1 cup which made the mixture more pumpkin-y, which was a plus for me. Then I used 2 tsp of pumpkin pie spice and 1/2 tsp ground cinnamon. The results were very delicious. It made about 15 pancakes for me.

Cucumber Raita

We used Greek yogurt for this recipe and it thinned out well after sitting in the fridge overnight after combining it with everything else. Very light and fresh-tasting. We used one reviewer's suggestion to peel the cucumber to the seeds then dice the inner peels for the raita. The texture of doing it that way worked well for us.

Indian Chapati Bread

I was a little nervous about the whole wheat flour making the chapati grainy, but it wasn't! We let it stand for 30 mins before cooking. Very delicious with the cranberry bean curry my friend served and the Cucumber Raita found on allrecipes.com. Definitely a keeper recipe.

Honey Mustard Grilled Chicken

Followed the recipe exactly and it was amazing. We don't have a grill, so I pan-seared the chicken. The glaze on the outside was delicious while keeping the chicken moist and tender on the inside. Hubby, 4-year-old daughter and myself LOVED it. Thanks!

Baked Potato Soup III

So much better than the half milk half chicken broth potato soup I made before! Rather bland and floury-tasting without the cheese and sour cream, but the with it--man! Delicious! It's a thick, creamy, rich soup. Perfect for chilly and/or rainy days. I used the leftover bacon drippings and supplemented some margarine with olive oil to make the 2/3 c. butter. I also microwaved the 4 potatoes then peeled and cubed them and that worked perfectly. So quick and easy, love it! Thanks!

Spicy Fry Sauce

Fantastic! I was missing Utah/Idaho during lunchtime so I made myself some oven fries (with dried rosemary, olive oil, and coarse sea salt) and whipped this fry sauce together. My 4-year-old and I LOVE it! Great flavors. Oh, and I took the suggestion to do half BBQ and half ketchup and it turned out just plain awesome. In lieu of Some Dude's, this will more than do. :) Thanks!

Buffy's Refried Beans

Fantastic! Used butter instead of lard (no lard on-hand) and just the bean juice from the can. No salt. So, basically just 1/2 c. butter and 3 cans of pinto beans. DELICIOUS! I didn't know making refried beans could be so easy--and tasty. Thanks, Buffy!

Chicken Puffs

Very delicious. I added 3/4 tsp of dried oregano, but I didn't taste a difference. Didn't need it anyway. The onions and minced garlic were perfect. Not too cream cheesy (and I'm not a cream cheese fan). The crescent dough is the perfect shell for the filling. This has been added to our menu rotation. :) Thanks!

Oreo™ Cookie Bark

Made this for a Thanksgiving get-together with family and everyone loved it. My husband said it's better than Hershey's Cookies and Cream candy bars. Don't crush the cookies too much or else you get more powder and not as much cookie. Super easy to make and a crowd pleaser. Thanks for sharing!

Italian Grilled Cheese Sandwiches

Didn't use the marinara sauce suggested, but the grilled cheese itself was made per-recipe. Delicious! So simple that I was a little ashamed I hadn't thought of it myself--but so good! Definitely a keeper for grilled cheese and tomato soup dinner nights. Thanks for sharing!

Beef Noodle Soup

I made mine in a slow cooker on HIGH for 4.5 hours. The meat turned out perfectly. Added about 1/4-1/2 tsp celery seeds since we love the flavor but hate the vegetable. Boiled egg-free noodles on the stove and added separately to each individual portion (helps with our varied carb and caloric needs). Pretty bland recipe... Needs something...
