English Muffin Bread

This was really easy and it came out soooo good!! I don't make bread often, so I was happy that it came out so well. I wanted something simple, so the hardest part for me was getting the water and milk to the proper temps for the yeast. Once that was accomplished, it was smooth sailing!! It's great toasted with butter and for breakfast sandwiches.

Honey Garlic Vinaigrette

A winner!! I did add some salt and pepper, but otherwise I made it just as the recipe states. I served this on baby romaine with shaved asiago and toasted almond slices. Everyone went back for seconds (and thirds)!

Best Chocolate Chip Cookies

These came out awesome! I made them small, maybe a rounded teaspoon. Ended up with 7+ dozen, which was fine, because we kept eating them as they came out of the oven. I think next time I'll add a little bit more vanilla, but otherwise they were perfect. I've always had issues getting chocolate chippers to rise instead of spread. I like them chewy in the middle and not too crispy. I baked them for 9-10 minutes on parchment paper.

Turkey Tetrazzini II

This came out pretty good with a few tweaks. I used medium whole wheat shells, which held the sauce nicely. First, I used half chicken broth and half white wine for the liquid portion. I added a can of mushrooms, a can of peas, and about a cup of frozen corn niblets. I used about 1.5 cups of shredded swiss, about .5 cup cheddar and a sprinkle of pecorino romano. To cope with all the extras (and all that cheese!) I added another .5 cup chicken stock. I baked it a little longer so the liquid would thicken up more. But all in all, a good base recipe, and great on a cold day!

Baked French Toast

This one is a keeper!! I reduced the egg and milk mixture a little bit the second time I made it. The first time was a little too wet and egg-ey for my taste. Also, the second time I made it I added chopped pecans and a little cinnamon to the syrup mixture. So Good! Reminded me of a sticky cinnamon bun. No need to add more butter or syrup to the final product. I have made this for Sunday brunch twice and I got amazing compliments. PS - Use crustier french bread, day old if you can find it. I feel like it holds its shape better.

Apple Maple Crumble Pie

Here in the Garden State we have so many pick-your-own apple orchards, and I'm always looking for new apple desserts to make. This is so much simpler than making a pie, and I think it's even better. I use as many types of apples as I can find for variety in taste and texture. Yum!

Slow Cooker Chicken Taco Soup

So GOOD!! The recipe makes a LOT of soup, so I froze half of it for a later date. (There's only 3 of us in my house) The beans and corn make it really filling.

Citrus Turkey Brine

I have used this brine for my Thanksgiving turkey for the last two years. I buy extra oranges, lemons, onions and thyme and stuff the bird with them to roast. The brine makes such a moist bird, it almost makes it impossible to carve! I'd rather have moist, flavorful meat than pretty, dry slices anyday.

Cheesy Chicken and Chive Sauce

Easy to throw together with ingredients I always have in the kitchen. Yummy over penne or rotini. Would probably be good over rice as well. I usually add more cheese than the recipe calls for, because I love cheese!!
