About this Cook
I work full time and have three young children. I don't have time for gourmet cooking and currently prefer slow cookers and meals that don't take long. My kids are pretty good trying new things, but I can't spend all night in the kitchen chopping and measuring lots of ingredients. Anything that I can prepare ahead of time is helpful! Oh, and my husband likes to eat low-carb.

Mushrooms, rice, soups, anything with a sauce for dipping
My cooking tragedies
It took me 3 tries to make guacamole - I kept messing it up because I couldn't mash the avocado. I finally figured out not to refrigerate it!

Jet Swirl Pizza Appetizers
A perfect appetizer for a few parties we've had. I like that I can double it and it still fits in the toaster oven. Very popular. I like that it doesn't have sauce and is therefore less messy.

Italian Breaded Pork Chops
Easy. Had all ingredients at the house. Meat didn't dry out. Followed recipe exactly.

Golden Potato Soup
I had lots of potatoes around the house and was looking for a soup recipe. I love this one because I already had all the ingredients in the house and even improvised. I added carrots and used bacon instead of ham. I also blended the soup before adding the cheese and meat. My 3 year old and 1.5 year old boys loved it and they are so picky! Great recipe!
