Best Bread Machine Bread
Followed the suggestions to swap in 1/2 cup wheat flour and extra 1/2 tsp salt. Also used canola oil instead of vegetable oil because that's all I had. Don't be afraid to ignore conventional bread machine use and add the ingredients as stated in the recipe. Amazing perfect bread!

Sweet Chunk Zucchini Pickles
You can definitely can these and store them well-sealed for a couple years. My grandmother used to make them and give us all sealed jars which we stored at room temperature for up to 2 years (maybe more). Once opened, store in the fridge.

Vegetarian Phad Thai
This was OK, but like many other reviewers I would say to cut WAY down on the peanut butter and cut back on the brown sugar. It was overwhelmingly peanut-y and a bit sweet for my tastes. Also, I say save the raw chopped/ground peanuts to sprinkle on top at the end. Otherwise would be good with a bit of tweaking.
