Quick Pickled Jalapeno Rings

This is an excellent recipe, as is. I have made it a couple of times now, adding bite size pieces of onion and bell peppers, to fit the chips (actually, reduced fat triscuits) I use for nachos. I won't be buying the ready made jars of slice jalapenos anymore. It's couldn't be much easier. Thnx Chef John!

Mango Orange Sorbet

Mango and orange go very well together. I cut the sugar by half and added 1/4 cup of milk, as I thought the milk provided a bit of creaminess that was lacking.

Avocado Shrimp Ceviche-Estillo Sarita

This was very good. I added 2 cloves minced garlic with the tomatoes, onion and cilantro. I also marinated the shrimp mixture overnight and drained off the excess liquid before step 2. Next time I will add a second avocado. Thanks for sharing

Bland. Needs less butter/oil, more mushrooms. I'd also recommend adding corn starch and cream as several others have suggested.

Asparagus Rolantina

I always follow a recipe exactly the first time out, as I did here. I received several compliments for the dish, but had plenty left over. Next time, I think I'll just blanch the asparagus and then let it do its cooking in the oven, wrapped in bacon instead of proscuitti and maybe using boursin instead of the swiss cheese. It really needs to be kicked up a notch. I think I'll leave off the bread crumbs too ... as they didn't add anything.

Shrimp and Asparagus

Very simple and comes together VERY quickly. I'd suggest having all the prep work done before starting to actually cook, or you may end up with overcooked shrimp. To use fewer pots/pans, I boiled the asparagus in the pasta water, before cooking the pasta. I also tossed it with orzo instead of the egg noodles. Excellent recipe! Thanks, Cathy!

Guacamole

I'm editing my first review to emphasize just how good this guacamole recipe is. I've made it now maybe 20 times and the most common response I've has is; "this is the best guacamole I've ever had". It really doesn't taste like anything special immediately after mixing things up, but becomes absolutely wonderful after spending a few hours in the fridge. Make it ahead of time, but finish it all up the second day. Thanks for sharing, Bob!

Pineapple and Basil Sorbet

While good enough to make again, I'll halve the amount of basil next time. I thought using 1/4 cup overpowered the pineapple. However, my pineapple was not extremely fresh, and may have lacked some flavor to begin with.

Broken Spaghetti Risotto

I'm a big fan of Chef John's, but this fell short of his usually excellent recipes. It was bland, bland, bland. Instead of trying to figure out how to fix it, I'll just start by choosing a different recipe next time. Keep them coming anyway, Chef John!

Chef John's Peach Cobbler

I recently received a box of peached from the fruit of the month club and didn't have clue what to do with them. Luckily, I found Chef John's Peach Cobbler recipe. I made it exactly as written (and shown on the video) and it was fantastic! I particularly appreciated using Chinese 5 Spice instead of Cinnamon, as it added a new twist to this classic. The recipe is very good just as it is, but if I were to make a suggestion, I'd add an additional cup of sliced peaches. Thanks, Chef John.

Pollo (Chicken) Fricassee from Puerto Rico

It was was way too much a potato fest without additional chicken; so I added 4 thighs. Otherwise, I made it exactly as written. By the time this dish was finished cooking though, it was way overcooked. The potatoes were mushy and falling apart and the chicken wasn't very tasty (or appealing) either. If I were to ever make it again, I'd do it on the stovetop, rather than rely on the prescribed time in the slow cooker.

Okra with Tomatoes

I made this with fresh okra instead of frozen, but otherwise followed the recipe at least to the end. When made, I thought the recipe would have been better with about half of the amount of cayenne pepper, as I thought it overwhelmed the balance of flavors. Normally, the stewed tomatoes will add the sweetness, but in this case (because of the cayenne) it needed some sugar. I added almost a TB before thinking it was back in balance. I'll make it again, but will not add all the pepper called for. BTW: One of the reasons I tried this dish was because of the cayenne. I love hot peppers.

Chef John's Ham and Potato Soup

I made this using leftover Easter ham, and would warn folks to be careful not to use the parts heavily glazed. It's like adding a few tablespoons of sugar to the soup. This is a good recipe and I'll definitely make it again.

Easy Vodka Sauce

Pretty good stuff! I halved the recipe, but found if you think a halved version serves 5 you don't like food that much. I'd say it made two main dish type (hearty) servings. Since I like spicy, I added 1/2 teaspoon of crushed red chili peppers and salt and pepper to taste. Otherwise, I made it to specs. It was good, fast and I will make it again. Thanks, Married!

Panzanella Salad

I wish I had paid more attention to the reviews. I would have used very hard/chewy bread rather than just day old Italian, as my bread got soggy. I would have also used more tomatoes, onions and olives. As is, it was OK, but has the potential to be better.

Blue Cheese, Spinach Meat Loaf Muffins

Very nice recipe. I like the muffin thing too, as it makes it real easy to save leftovers. While, good, as is, next time I'll jazz it up a little with more blue cheese, more spinach and maybe some chopped green pepper. I'd also consider topping with a Catsup or BBQ type glaze during the last 5 minutes of cooking.
