Okra with Tomatoes

I made this with fresh okra instead of frozen, but otherwise followed the recipe at least to the end. When made, I thought the recipe would have been better with about half of the amount of cayenne pepper, as I thought it overwhelmed the balance of flavors. Normally, the stewed tomatoes will add the sweetness, but in this case (because of the cayenne) it needed some sugar. I added almost a TB before thinking it was back in balance. I'll make it again, but will not add all the pepper called for. BTW: One of the reasons I tried this dish was because of the cayenne. I love hot peppers.

Jalapeno Popper Spread

If you like the taste of the Jalapeno Poppers from Sonic Drive in (I do), you'll love this recipe. They are nearly identical in flavor. I doubled the diced jalapenos as suggested by many of the reviewers and am glad I did. It was great. Thanks, Denise!!

Sauerkraut and Smokies

I can't figure out if this is supposed to be a main dish, or a side item. It didn't seem to be completely in either category. I liked the flavors, but don't think I'll make it again.

Big Ed's Cajun Shrimp Soup

Like several of the other reviewers, I added celery, okra and lots of hot sauce. It was very tasty. I've made this many times and find it's always tastes best on day 2.

Real Texas Chili

Perhaps I'm not used to chili without onions and tomatoes, but I'd have to make up a brand new name for this concoction. It's not like any chili I've had anywhere ... including Texas. I like the flavors, but it doesn't work as a stand alone dish.

Lamb Chops with Balsamic Reduction

This is my very first experience cooking, or eating lamb chops, but I really enjoyed it. Being such a newbie, I obviously can't compare the taste to other lamb recipes I've had, but I'll definitely make this again. It's easy and tasty.

Guacamole

I'm editing my first review to emphasize just how good this guacamole recipe is. I've made it now maybe 20 times and the most common response I've has is; "this is the best guacamole I've ever had". It really doesn't taste like anything special immediately after mixing things up, but becomes absolutely wonderful after spending a few hours in the fridge. Make it ahead of time, but finish it all up the second day. Thanks for sharing, Bob!

Devil's Steak Sauce

Very Good!! The only changes I made, based on a few of the reviews, was to add five shakes of Habanero Tabasco instead of five drops. It was hot and spicy and great! It didn't make much sauce after reducing, so next time I'll try doubling the recipe. I may also experiment with using tomato paste instead of sauce to aid in thickening and trying other jams. It's a great recipe. Thanks for sharing Bernard.

The Best Meatloaf

I thought it was bland the first time I made it a few years ago, but I "accidently" made it again last night. I had not realized it was the same recipe till it was in the oven. My bad, but it's still flavorless. It is a good base recipe, but needs to be kicked up a couple of notches. Maybe a salsa glaze, or combine with some jalepenos.

Tuna Noodle Casserole from Scratch

Very good and really very easy. Thanks MVANWINKLE. The things I did differently than the recipe is that I used farfalle pasta (had it) and substituted crushed french fried onions for the bread crumbs. Since some of the early reviews complained about dryness, I also added 1/4 cup of white wine to the mushrooms when they were cooking. I really think this might be just as good with chicken as it is with tuna. Update: I've made this again, using Thanksgiving turkey leftovers. It's just as good. Turkey, Chicken, or Tuna ... doesn't matter.

World's Best Lasagna

This is a lot of work, considering the end result. It's OK, but certainly not the "World's Best Lasagna". I thought it tasted very sweet. It was served it at an informal dinner party, where the guests voted the 3 stars shown.

Asparagus Rolantina

I always follow a recipe exactly the first time out, as I did here. I received several compliments for the dish, but had plenty left over. Next time, I think I'll just blanch the asparagus and then let it do its cooking in the oven, wrapped in bacon instead of proscuitti and maybe using boursin instead of the swiss cheese. It really needs to be kicked up a notch. I think I'll leave off the bread crumbs too ... as they didn't add anything.

Ultimate Shrimp Scampi

Sausage Stuffed Jalapenos

I substituted half of the sausage for an equal amount of bite-sized slightly pinked shrimp. I was very good. Next time I'll add mushrooms. (Remember to wear gloves when seeding the jalapenos. I forgot and "burned" my fingers.)
