Quick Hoppin' John Soup

To "cajunize" it a little, I added celery, onion and bell pepper. It was good, but greatly benefited from having a serving of cornbread in the bottom of the bowl. Flavors improved on day two.

Bubba's Spanish Delight

A picture of this dish ought to be next to the definition of "comfort food" in the dictionary. I've tried to use fresh mushrooms and fresh tomatoes, but it doesn't add much to the taste. I think I'll just stick with the recipe in its all too decadent form.

Pollo (Chicken) Fricassee from Puerto Rico

It was was way too much a potato fest without additional chicken; so I added 4 thighs. Otherwise, I made it exactly as written. By the time this dish was finished cooking though, it was way overcooked. The potatoes were mushy and falling apart and the chicken wasn't very tasty (or appealing) either. If I were to ever make it again, I'd do it on the stovetop, rather than rely on the prescribed time in the slow cooker.

Key Lime Pie VII

The hardest part of this recipe was finding actual Key Limes and squeezing the juice out of them. I actually used nearly 30 of the little buggers. The recipe is fantastic, as is. The only thing I'll try to do differently next time, (purely for aesthetic reasons), is to whip the mixture a little more to see if I can increase the volume.

Turkey Tetrazzini II

Per several of the reviews, I added sauted minced garlic, diced celery, diced onions, peas and mushrooms to the mix. I topped the mix with a few handfuls of crushed French's Fried Onions. It was good, but not great. Since I changed the original recipe so much, I don't know how to rate it. I think I'll give a 4, with reservations. Next time I'll make the very similar MVANWINKLES Tuna Casserole From Scratch, using the turkey instead of tuna.

Guacamole

I'm editing my first review to emphasize just how good this guacamole recipe is. I've made it now maybe 20 times and the most common response I've has is; "this is the best guacamole I've ever had". It really doesn't taste like anything special immediately after mixing things up, but becomes absolutely wonderful after spending a few hours in the fridge. Make it ahead of time, but finish it all up the second day. Thanks for sharing, Bob!

Awesome Slow Cooker Pot Roast

The ease of making this is nearly matched by the wonderful flavors. Even though I halved the liquids, there was more than enough gravy. This is a great starting recipe, that you can take in any number of directions. Thanks, Brenda

Cheeseburger Meatloaf

Although I had read all the rave reviews, I was still surprised this was so good. The meatloaf was very moist and flavorful and went wonderfully with roasted new potatoes. I would however, suggest that everyone take heed use and one of the alternate methods to "pinwheeling" the meat around the cheese as described in the recipe. I thought I had been successful in rolling the meat around the cheese, till about 1/3 of the cheese bailed. I followed the recipe faithfully, except in the cheeseburger tradition added mustard and ketchup as a glaze. BTW: It really might be nice to mix this recipe with CaraMeg's Dill Pickle Meatloaf, which is also very good. Thanks for sharing, Douglass.

Pineapple and Basil Sorbet

While good enough to make again, I'll halve the amount of basil next time. I thought using 1/4 cup overpowered the pineapple. However, my pineapple was not extremely fresh, and may have lacked some flavor to begin with.

Avocado Shrimp Ceviche-Estillo Sarita

This was very good. I added 2 cloves minced garlic with the tomatoes, onion and cilantro. I also marinated the shrimp mixture overnight and drained off the excess liquid before step 2. Next time I will add a second avocado. Thanks for sharing

Okra with Tomatoes

I made this with fresh okra instead of frozen, but otherwise followed the recipe at least to the end. When made, I thought the recipe would have been better with about half of the amount of cayenne pepper, as I thought it overwhelmed the balance of flavors. Normally, the stewed tomatoes will add the sweetness, but in this case (because of the cayenne) it needed some sugar. I added almost a TB before thinking it was back in balance. I'll make it again, but will not add all the pepper called for. BTW: One of the reasons I tried this dish was because of the cayenne. I love hot peppers.

Jalapeno Popper Spread

If you like the taste of the Jalapeno Poppers from Sonic Drive in (I do), you'll love this recipe. They are nearly identical in flavor. I doubled the diced jalapenos as suggested by many of the reviewers and am glad I did. It was great. Thanks, Denise!!
