Blue Cheese, Spinach Meat Loaf Muffins

Very nice recipe. I like the muffin thing too, as it makes it real easy to save leftovers. While, good, as is, next time I'll jazz it up a little with more blue cheese, more spinach and maybe some chopped green pepper. I'd also consider topping with a Catsup or BBQ type glaze during the last 5 minutes of cooking.

Szechwan Shrimp

My 4 stars is really for the sauce. It's very tasty! My only recipe suggestion (besides doubling the sauce) is to use uncooked shrimp. Cooking the already cooked shrimp while the sauce thickens makes the shrimp needlessly tough.

Penne with Chicken and Asparagus

The only change I made was to use a store-bought rotisserie chicken with the meat pulled off the bone, rather than cubed. This recipe is bland, bland, bland and was a waste of good ingredients.

Mushroom Soup Without Cream

I've made this soup twice now. The first time with chicken stock and the second with vegetable broth. It was best with the chicken stock, but both were a little bland ... asking for more salt than I was comfortable using. It was good, but I'm still looking for a better broth-based mushroom soup.

Quick and Easy Chicken and Rice

I shredded half a rotisserie chicken from the grocery store, but otherwise made it as written. It was almost too good. I think I had three servings. I'm sure I will be making this again and again. Next time, I may experiment by adding chopped celery and brown rice.

Mango Orange Sorbet

Mango and orange go very well together. I cut the sugar by half and added 1/4 cup of milk, as I thought the milk provided a bit of creaminess that was lacking.

Quick Hoppin' John Soup

To "cajunize" it a little, I added celery, onion and bell pepper. It was good, but greatly benefited from having a serving of cornbread in the bottom of the bowl. Flavors improved on day two.

Bubba's Spanish Delight

A picture of this dish ought to be next to the definition of "comfort food" in the dictionary. I've tried to use fresh mushrooms and fresh tomatoes, but it doesn't add much to the taste. I think I'll just stick with the recipe in its all too decadent form.

Pollo (Chicken) Fricassee from Puerto Rico

It was was way too much a potato fest without additional chicken; so I added 4 thighs. Otherwise, I made it exactly as written. By the time this dish was finished cooking though, it was way overcooked. The potatoes were mushy and falling apart and the chicken wasn't very tasty (or appealing) either. If I were to ever make it again, I'd do it on the stovetop, rather than rely on the prescribed time in the slow cooker.

Key Lime Pie VII

The hardest part of this recipe was finding actual Key Limes and squeezing the juice out of them. I actually used nearly 30 of the little buggers. The recipe is fantastic, as is. The only thing I'll try to do differently next time, (purely for aesthetic reasons), is to whip the mixture a little more to see if I can increase the volume.

Turkey Tetrazzini II

Per several of the reviews, I added sauted minced garlic, diced celery, diced onions, peas and mushrooms to the mix. I topped the mix with a few handfuls of crushed French's Fried Onions. It was good, but not great. Since I changed the original recipe so much, I don't know how to rate it. I think I'll give a 4, with reservations. Next time I'll make the very similar MVANWINKLES Tuna Casserole From Scratch, using the turkey instead of tuna.

Guacamole

I'm editing my first review to emphasize just how good this guacamole recipe is. I've made it now maybe 20 times and the most common response I've has is; "this is the best guacamole I've ever had". It really doesn't taste like anything special immediately after mixing things up, but becomes absolutely wonderful after spending a few hours in the fridge. Make it ahead of time, but finish it all up the second day. Thanks for sharing, Bob!

Awesome Slow Cooker Pot Roast

The ease of making this is nearly matched by the wonderful flavors. Even though I halved the liquids, there was more than enough gravy. This is a great starting recipe, that you can take in any number of directions. Thanks, Brenda NOTE TO FUTURE SELF: Brown the roast on all sides before placing in crock pot.
