Quick Pickled Jalapeno Rings

This is an excellent recipe, as is. I have made it a couple of times now, adding bite size pieces of onion and bell peppers, to fit the chips (actually, reduced fat triscuits) I use for nachos. I won't be buying the ready made jars of slice jalapenos anymore. It's couldn't be much easier. Thnx Chef John!

Baked Asparagus with Balsamic Butter Sauce

The balsamic vinegar overwhelmed the asparagus, and even with a "skinny" bunch of asparagus, 12 minutes was not enough cooking time. If I make it again, I'll halve the vinegar and keep closer tabs on cooking time.

Garlic Steak with Garlic

My daughter and I get together most every Sunday night for grilled steaks. We both loved the "garlic steaks". While it won't replace our go to basic salt-pepper-minced garlic recipe, it was a nice change. We'll do it again.

Chicken Cordon Bleu II

This was my first attempt to make Chicken Cordon Bleu and it turned out well. Next time though, I'll be sure to use string instead of toothpicks, as a lot of the swiss cheese oozed out and left the chicken a little drier than need be. I also think I'll add some fresh chopped basil to the sauce at the end as suggested by one of the earlier reviews.

Easy Vodka Sauce

Pretty good stuff! I halved the recipe, but found if you think a halved version serves 5 you don't like food that much. I'd say it made two main dish type (hearty) servings. Since I like spicy, I added 1/2 teaspoon of crushed red chili peppers and salt and pepper to taste. Otherwise, I made it to specs. It was good, fast and I will make it again. Thanks, Married!

I made the recipe exactly as written. It was good, but next time, I will definitely reduce the poultry seasoning by half and probably eliminate the water chestnuts altogether. The poultry seasoning was way too pronounced and the chestnuts didn't add anything. I will probably add more mayonnaise too, as the mixture ended up being pretty dry.

Tortilla Soup II

Good stuff! As suggested by several reviews, I started with leftover rotisserie chicken, added a 14.5 oz can of rinsed black beans and a cup of frozen corn. I loved the result. It was easy and fully flavored! Nice and spicy! Thanks Sheila.

Hungarian Mushroom Soup

Excellent!! I used crimini mushrooms, adding 1/4 cup of white wine while sautéing. Not having any fresh parsley, I added dried to the mix for the last 5 minutes of the simmering to make sure it had hydrated. My milk was sour, so I used heavy cream. Otherwise (ha ha) I followed the recipe. Regardless, it was wonderful. I'll be making this a lot. Thanks HAMM!

Balsamic Roasted Pork Loin

I followed instructions exactly and was disappointed, given all the rave reviews. While I very much like balsamic vinegar and used an aged, high quality product, it overpowered the meat. I'll have to agree with some of the others, that said to reduce the vinegar to 1/3 cup.

Panzanella Salad

I wish I had paid more attention to the reviews. I would have used very hard/chewy bread rather than just day old Italian, as my bread got soggy. I would have also used more tomatoes, onions and olives. As is, it was OK, but has the potential to be better.

I was looking for something to utilize my bountiful crop of basil this year and made this pesto. I liked it very much as is (with a scant teaspoon of kosher salt). I am freezing what we can't eat immediately and appreciate the tip of adding a thin layer of olive oil.

Shrimp and Asparagus

Very simple and comes together VERY quickly. I'd suggest having all the prep work done before starting to actually cook, or you may end up with overcooked shrimp. To use fewer pots/pans, I boiled the asparagus in the pasta water, before cooking the pasta. I also tossed it with orzo instead of the egg noodles. Excellent recipe! Thanks, Cathy!
