Cheddar, Baby Leek and Tomato Sandwich

Fantastic update to the standard grilled cheese. Made this for lunch today, put on a little Tony Bennett Duets and was loving life! I sauteed the leeks as another reviewer suggested and this made a huge difference! I also used mozzerella instead of white cheddar and was very happy with the results. I will be sharing this one with my girlfriends.

Asian Beef Skewers

Wow! This was just like they serve in the restaurants! Loved it. Here are my alterations. Didn't have any sherry, so substitued rice vinegar. Was wonderful! Used extra clove of garlic. Marinaded 4 hours and came out perfect- not too salty as some reviewers warned against. I also boiled the remaining marinade (boil at least 3-5 minutes), adding a little soy sauce. I used this sauce on jasmine rice with chopped green onions and it was the perfect match for the beef.

Cream of Spinach Soup

A true hit. . . and I don't even really like spinach! I did use a cup of heavy cream and a cup of milk instead of 2 cups of milk. Soooo much better with the sweetness and heartiness heavy cream provides. Serve with hot French bread - couldn't be any better!

The Best Lemon Bars

These bars are wonderful!! I passed them around to family- a big hit. My mom said they were even better than her best lemon bar recipe- sorry Aunt Linda!

Chicken Piccata III

Yummy! My family really enjoyed this dish. I cut the artichokes into smaller pieces. Nice variation from capers and white wine.

Angel Hair Pasta Chicken

This is a wonderful recipe. Very light and healthy. I used fresh brocolli and lots of garlic. I added a tablespoon of flour to thicken the "sauce". It would have been just broth otherwise. That worked very nicely.
