Stuffed Green Peppers I

This was fantastic, and a great dinner for a cold night! I adjusted slightly to add 1 cup of rice instead of 1/2, to stretch the recipe just a bit. I added a little more cheese than the recipe called for, and I didn't have two cans of tomato soup, so I used the one can I had and a can of tomato sauce. It worked out great. Loved the recipe!

Salsa Chicken Rice Casserole

My family absolutely loved this dish. I didn't have cream of chicken, so I substituted a can of cream of celery, and added a little chicken soup base just to add the chicken flavor. I also pretty much doubled the cheese, but it was a huge hit with the kids!

Best Ever Muffins

I made these muffins with fresh blueberries, and they were absolutely TO DIE FOR. The only other adjustment I made was to sprinkle cinnamon and sugar over the top of the muffins before baking, to give them that little crust my kids like, but other than that, I followed the recipe to the letter. They were absolutely fabulous.

Carol's Arroz Con Pollo

My family and I absolutely LOVED this recipe. Barely three bites in, all of my children were asking to have it again. I did add mushrooms, because my favorite arroz con pollo has mushrooms in it. This recipe is definitely a winner, and will be made time and again in my house!

Brown Sugar Meatloaf

Ok, I admit I wasn't paying attention to the recipe. I had 6 kids running around screaming, and my SIL trying to talk to me about SERIOUS FAMILY DRAMA (duh duh duh). So instead of putting the brown sugar and ketchup down in the pan, I accidentally mixed it all together. The result was a very wet mix, so rather than putting it in a loaf pan, I put it in a loaf shape on a cookie sheet. It was thinner than a loaf, so I cooked it about 40 minutes, topped it with ketchup for an additional 10, and then served. It was a HUGE hit, even though I was worried I ruined it by putting the brown sugar in the mix. My husband has requested that I only ever make it this way! (oops!)

Chicken Enchiladas I

This recipe went over well with my husband and four kids. One picked out all the green pepper, but overall, they liked it. I did omit the water, as I was afraid it would turn out soupy, but it ended up being ok. My husband suggested making it in the future by tearing up the tortillas and layering it, like a casserole, but other than that, it was great.

Tater Tot Hot Dish II

I made this last night for my family (including my husband who "hates casseroles") and they LOVED it. I was surprised that the tots disintegrated, because other tot casserole recipes I've made didn't do that - but it was ok - it actually added to the overall yumminess of the dish, and made me realize I could use shredded hashbrowns in a pinch if I didn't have tots. I did modify slightly - used more meat, added 2 cans (drained) of french style green beans, and topped with cheddar cheese over the french fried onions. The cheese and onions made this wonderfully cheesy/crispy top layer, that my husband said he'd have loved to eat alone! It was great. I highly recommend this dish for anybody with kids!

Roasted Vegetable Chicken

Made this last night, and it was fantastic. Next time I will probably rub some butter and herbs UNDER the skin of the chicken, as all the stuff I put on top of the chicken came off as it baked. Also, I didn't cut up the potatos because the recipe didn't call for it, and I ended up having to nuke the potatos at the end because they weren't quite done yet.

Easy Tuna Casserole

This casserole was absolutely awesome. It is SO simple to make, and my family LOVED it. Specifics for how I made it - I used chunk white albacore, sharp cheddar cheese, and larger portions which meant 3 cans of soup - I used 2 cream of chicken and 1 cream of mushroom, just because I didn't have another cream of chicken. It was awesome, and even my picky eaters (of which I have at least 3 on any given night) had seconds. My husband suggested the addition of some onions actually IN the casserole, which might be tasty. Alternately, I served it last night with a big green salad with red onions (and a lot of other veggies), and the onions in the salad just went REALLY nicely with the casserole. AWESOME! Thanks for posting this!
