Chicken Cordon Bleu II

Reviewed: May 26, 2008
I prepared this pretty much as the recipe said, but added some seasoned bread crumbs, about a tablespoon to the flour and paprika. I dredged the rolled chicken breasts in egg and then in the flour mixture. I cooked it for the 30 minutes, perfect timing! I then prepared the sauce as you said but just before pouring it over the chicken I added a tablespoon or so of prepared Pesto!! Delicious!! Oh yes, one more thing, as I took the meat out of the pan onto a warming dish, I scooped up the melted swiss cheese and drizzled it over each breast....waste not, want not!!!

Italian Style Pork Chops

Reviewed: Jan. 18, 2009
Finally a pork chop recipe that is DELICIOUS!! This recipe as written I agree calls for way too much of the cheese and crackers, but just cut back on both of those items leave the rest as the recipe says. Really great!! I turned the meat over about 1/2 way through cook time. I think next time I make these I may not turn them for a comparison. My Husband HATES, HATES parmesan cheese..did I say HATE?? But, he really liked these chops, this is a real keeper...thanks for the recipe!!

French Herb Bread

Reviewed: Jan. 22, 2009
I don't usually make bread, but!!! I made a spaghetti sauce tonight (you will get that recipe soon...it's almost perfect)! This bread is really great! We loved it. I actually rolled it out kind of funky so I cut it to make a loaf for my son who does not like onions...yahoo!! Will make again with a few of my own ideas..will keep you posted!!!

Enchiladas Verdes

Reviewed: May 6, 2010
Cinco De Mayo meal was a hit...thanks to these enchiladas!!! I used ingredients as listed, but I did add some of the verde sauce to the chicken that I had put into a small pot to warm and also addsd the cilantro and a bit of fresh onion to the meat. I did forget to dredge the tortillas in the sauce which I don't think made a big difference. I found both of the cheeses at a local grocery store (with about a million other mexican food items, glad I found that store) my husband hates sour cream so when he saw the crema fresca, he opted out !! No big deal just made mine and his a little different. Our 10 year old son gobbled them up also, can't wait to make them again, a bit extra work, but oh so worth it!!! I also baked them in 350 degree oven for about 15 minutes..DELICIOUS!!!

Classic Peanut Butter Cookies

Reviewed: Oct. 16, 2008
This is a really great recipe, I too, made a few changes to it. I used 1/2 cup more peanut butter, creamy. I also used 1 1/2 cups brown sugar only 1/2 cup white sugar. I added a teaspoon of vanilla and a 1/4 teaspoon almond extract. Instead of unsalted butter I used salted butter, therefore I did not use any salt...Very Good Cookies!!! Thanks!
