this was the fourth biscotti recipe I have tried and it was by far the best. I substituted the almonds for cranberries and found the flavor excellent. Instead of an egg white, I used the egg yolk mixed with a few Tbs of water (I was using egg whites for another recipe). I brought these to work as holiday christmas presents for the guys in my office and they all loved them! One guy even said that they were better than the ones he normally gets at Starbucks!

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

This was a great salad recipe. My friends and family really enjoyed the homemade dressing. I found the dressing made quite a large amount so the next time I maded it I cut the dressing in half. We also enjoyed this dressing or both standard salads and spinach salads.

Pear and Blue Cheese Salad

This was a great recipe and quick to make. It is my new staple when I have to go to a potluck. The recipe makes way more dressing that you need, and a little bit goes a long way with this salad. I cut the ingredients in half so I don't end up with too much (but it does keep ok if you do make the full amount). I followed the recipe very closely and it turned out great!!!

Brazilian Black Bean Stew

This is a great stew! It is one of my husbands favourites. We tend to double up on the chorizo sausage and leave out the ham, it makes the dish a bit spicer... just the way we like it! We all tend to add more tabasco sauce that suggested.

Shrimp Tacos

We really liked this recipe. It was a great summer dinner for us. I didn't add as much garlic and fried up some plain white onions instead of the red onions. The mangos added a great flavor! I tried this recipe with halibut (cooked in honey or maple syrup) and it turned out equally as good.

Herbed Salmon Steaks

This was a nice a quick salmon dish. Nothing specatular, but definitely suited to most peoples tastes. I will definitely be making this one again.

African Peanut Soup

This was great and easy to make. I would definitely add salsa instead of crushed tomatoes, just be careful that the salsa isn't seasoned with a lot of chipoltle.

Strawberry Balsamic Chicken

This was an excellent recipe! I mashed freash stawberries into vanilla yogurt and I found that it really helped to bring out the flavor. Give the sauce lots of time to thicken so the flavour becomes concentrated.
