Rice Balls a la Tim

They were pretty yummy as is, but I think a homemade sauce of some sort would complement the recipe.

Made cupcakes for daughter's bday. Total hit!! Everyone kept raving. Used Satiny Chocolate Glaze for the cupcakes...to alleviate possible frosting issue, I dipped the tops of the cakes into the glaze. Voila!! Perfect!!

Our "Go-to" recipe for Mexican Rice. Be sure to dissolve the bouillon completely or you will have a not-so-nice surprise at the end.

Kielbasa and Cabbage II

Reviewed: Jun. 26, 2011
I absolutely detest cabbage but hubby wanted me to cook some. So, I found this recipe. I'm now converted -- at least with this recipe...my only suggestions are to add minced garlic in the onion mixture and to also cook the kielbasa for a while first in a separate pan to reduce the amount of grease. It was too greasy for me as written.

Ali's Green Sauce

Reviewed: May 7, 2011
After making this 100x (I submitted this recipe years ago), I've realized that I prefer the sauce with a LOT more cilantro. These days, I usually add 3/4 of the bunch, tasting as I add to get the right flavor. Also, it's some times hard to find green tomatoes and so I've substituted regular tomatoes without affecting the taste. To keep the sauce 'green' for much longer than typical, sprinkle a generous amount of 'Fruit Fresh' into the sauce. (Fruit Fresh also works great for guacamole.) Salt is a must in this recipe to bring out the avocado flavor, and it also pairs well with saltier tortialla chips.

Gingersnap Dip

Reviewed: Jul. 2, 2010
It was good; I liked it but I had a TON left over from our Halloween party. Maybe it was just too sweet...I'll definitely make it again but maybe cut the recipe in half.

Sopapilla Cheesecake Pie

Reviewed: May 6, 2010
I made cookies out of these. I halfed the trianges, rolled them into balls and flattened them out. Then added a dollop of the cream cheese mixture, spread it out and then a generous ball of the sugar/cinnamon/butter. Baked for about 15+ minutes. They turned out great! I made these for a teacher appreciation luncheon and thought they were more presentable in cookie form. Thank you!!

Chicken Tetrazzini IV

Reviewed: Feb. 2, 2010
Sauteed about 2T garlic, a whole diced white onion and one package of fresh mushrooms in the butter. Once onions were soft, I added the flour and stirred to coat. Then I added the chicken broth and fat free 1/2 and 1/2 (instead of the cream). Cooked until thick and then added the chicken and sherry. Then I followed the rest of the recipe as written. Yummy!!! Lots of flavor and not so fattening...thanks!

T's Sweet Potato Fries

These were OK. I prefer "Onion Roasted Sweet Potatoes" which is another recipe for baked sweet potatoes on this site. The texture and flavor are so much better suited for this veggie.
