Cocktail Meatballs

These meatballs are amazing!!! They are so easy to make and have such a wonderful taste. SO YUMMY! I followed the recipe exactly, except that I used a pouch of onion soup mix instead of onions in the meatball mixture, as others have suggested. It worked out great! They were moist and very flavorful. I just had some of the leftovers, and the day after, they are even better (if you are lucky enough to have any left). This was my first attempt at meatballs and I was a bit skeptical, but these are easy and super tasty.

Fiesta Chicken from Uncle Ben's®

I am only giving this 4 stars because I made a few modifications based on other reviews (saying it was bland). Several people said it was bland, so I wanted to spice it up a little. Here are the modifiations I made: I completely omitted the water. I used one medium onion, one green pepper, and one red pepper. I used a can of enchilda sauce, a can of chicken broth, and a can of Rotel (the Mexican lime flavored kind). I also used a tad more chili powder and a dash of cayenne. It was very watery (despite using no water), yet did thicken as it sat. I served it with fresh cilantro, Mexican cheese, and tortilla chips. Next time, I will have some limes on hand to squeeze some juice over!! It's very tasty and we enjoyed it very much. The way the original recipe is written is a little confusing, because I was under the impression that everything is mixed together. But step 4 states that you serve the chicken over the rice. I was confused because I thought perhaps you were supposed to remove the chicken before cooking the rice? I cooked it by mixing everything together, and served it in bowls and it was terrific. This is a keeper!!

Artichoke Spinach Lasagna

Love, love, love, love this recipe!!! So tasty and yummy!! I left out the rosemary, as I didn't have any, used fresh spinach, and only used 1/2 cup of vegetable broth. Also, did NOT boil the noodles and they cooked PERFECTLY!!!! I used a 9x9 pan and it filled to the top beautifully (but beware, put it on a cookie sheet in the oven because it can bubble over the side). My boyfriend was very skeptical, since it had no meat in it, but he loved it too (and has already asked me to make it again)! I am slowly cutting meat out of my diet, and a recipe like this makes it much easier. This is very filling and honestly you don't even miss the meat because it is so tasty.

Ramen Noodle Frittata

I was very skeptical of this recipe. . . ramen noodles? For breakfast? Luckily I'm willing to try most foods at least once. This is so much better than I even thought it was going to be! Really easy to make and can be made to your liking with whatever you like. My personal favorite is adding some ham, onion, and jalapeno. It's not the healthiest, by far, but it's tasty!

Slow-Cooker Chicken Tortilla Soup

This is my #1 favorite recipe!! I always follow it exactly as written and it always turns out great!! I use lime flavored tortilla chips, and garnish with fresh limes and avocado. I would give this 10 stars if I could.

Jalapeno Popper Chicken

Made this for dinner and it was amazing! I opted to bake it in the oven (personal preference). I have made chicken before with fillings that always seem to bubble out, so I was anticipating this, no matter how hard I tried to secure with toothpicks. However, I had quite a bit of the filling left over, so what I did was the following: Instead of rolling the breasts in breadcrumbs, I put some of the filling on top of each of the breasts (just used a spoon to smear it), then sprinkled the breadcrumbs on top. I also seasoned with a bit of garlic powder and onion powder and a touch of cayenne. This recipe is a keeper!! *I found this recipe when searching for popper recipes. I found a copycat recipe for the sauce that Arby's gives you with their poppers, and had a bunch of that left over and was trying to find something to use the sauce with. BUT: this recipe was good by itself and didn't even need the sauce! I actually preferred it without the sauce.

Homemade Black Bean Veggie Burgers

Yum! I will say, that I tried as hard as I could to remove as much extra liquid as possible: I washed and dried the beans, also blotted the onion and pepper to remove as much water as possible. It was a little mushy and I did have problems with them falling apart. I used Ritz crackers instead of bread crumbs, and all I had to do was add more crackers until I got a good consistency that would form a patty. This one is a keeper in my book!

Jalapeno Popper Spread

Loved it! This was a hit at our barbecue. Really tastes like poppers. I followed the recipe exactly, had the perfect amount of spice for my liking. Not too spicy, but yummy!

Vegetarian Sweet and Sour Meatballs

Yum!!! I am currently working on cutting meat out of my diet, and trying new vegetarian recipes. This one is a keeper! Very tasty and easy to make. I left out the sage, because I didn't have any and they still tasted great. I also cut down on the breadcrumbs, the texture turned out fine. It's very hard to find vegetarian dishes that are satisfying, but this was was filling and yummy. Going to try it with marinara sauce next time!!
