Tuscan Cream Cheese Spread
This had really great flavor. I added 6-7 oz of sour cream and omitted the black olives. Everyone liked it, but I'm not sure I'll make it again. Quite a few ingredients for a dip, I might rather spend my prep time on something more substantial. But I did really like it.

Flounder Mediterranean
I also cooked the fish separately. I didn't bake anything, but did both the sauce and fish on the stovetop, then combined on the plate. I didn't have any white wine so left that out, but didn't miss it at all. Also used tilapia instead. Everyone loved it, and it was a great way to kick off my mediterranean diet - super healthy!

Sweet-n-Hot Beer Bratwurst Skillet
I made this as an appetizer for my New Years party. Everyone RAVED over it. I thought I had plenty but it was gone way too fast. I made a few small changes, but mine was still essentially the same. What I did: used chicken broth instead of beef, used Foster's brand beer, omitted chili-garlic sauce but added cayenne and flaked red pepper to taste, roasted my own red peppers on the grill, grilled the bratwurst after boiling to brown them, then sliced them into bite-size pieces and returned to the sauce. DELICIOUS!
