Greek Pizza with Spinach, Feta and Olives

We really liked it, but I wouldn't call it fabulous. I think it might have been the sun-dried tomatoes that threw it off for me. Not sure. After reading the reviews, I added a little chicken, some marinated artichoke hearts, and I sprinkled some mozzarella on top along with the feta. Not sure I'll make it again.

Couscous with Mushrooms and Sun-Dried Tomatoes

We loved it as a great vegan dinner option...but it only served the 2 of us, even using more couscous than the recipe called for. Tasted great; we loved it. Served with roasted zucchini strips. Perfect dinner.

Mr. Lincoln and Cecile Brunner in a Jam

We made this last weekend, using petals from our Belinda's Dream rosebush. I had never heard of rose petal jam or jelly until a few days before, certainly had never eaten it. I was a little wary of what it would taste like, but it's unusually wonderful, a delicate rose flavor, very sweet. Must be like what a hummingbird is tasting. We plan to give it as gifts. We washed the jars and lids in the dishwasher, then boiled them in pans of hot water, leaving until ready to fill. One recipe made 3 and a half jars (I think they were 6 or 8 oz. size jars. Anyway, you should allow for 4 jars if possible. And it's so pretty! Whatever color the roses are, that will be the color of your jam. This was a huge hit as a gift at Christmas. So unusual!

Lentils with Tomatoes

I substituted rice wine vinegar for the lemon juice and added a chopped tomato I had on hand. Otherwise, I followed the recipe as written. I served it at room temperature. I really liked it, and I'll make it again.

Fresh Asparagus Soup

We loved this, but it was stringy. I used an immersion blender. Maybe next time I'll use a blender. The flavor is definitely five stars; I'll work on the texture.

Cobb Salad

We loved it. I made it exactly as written except that I didn't have green onions, and I used a deli roasted chicken. I might try different dressings eventually, just to change things up, but Ranch dressing is good on it for sure.

Asparagus, Chicken, and Pecan Pasta

A tad bland even after adding crushed red pepper flakes. I think the sauce needs something. I read the other reviews and did add more broth. I also stirred in 3 wedges of Laughing Cow cheese to melt into the hot broth. Might benefit from a little lemon juice and/or white wine. We liked it. I'll make it again.

Chocolate Chip Banana Bread II

Loved this recipe. I cut it in half and made muffins. The recipe cut in half made 12 full muffin cups, ready in 25 minutes, light and fluffy and terrific. Next time I'll try margarine and applesauce instead of shortening. I also added a splash of vanilla, and I tossed the chocolate chips in a little flour. A great recipe. UPDATE: I tried the margarine/applesauce substitution for shortening to try and cut down on fat. They still taste great, better than the recipe I used to use. I also tried a combination of white sugar/brown sugar. I do love the basic original recipe, and making substitutions doesn't seem to change it that much, always a plus.

Carib Black Bean Soup

I made this exactly written except for the fact that I didn't have any sherry. I substituted dry vermouth. I read all the reviews and opted to keep the 2 cups of water. I'm glad I did. If you serve it over rice (as you would gumbo), then the extra liquid is a good thing, but we thought it was also good without any rice. I used an immersion blender so I would still have some of the beans for texture. The flavor is wonderful. My husband and adult son both loved it, especially with a dollop of sour cream on top. I will definitely make this again. Best black bean soup I've ever had.

Hash Brown and Egg Casserole

My guys loved it, but said it needed some kick. I did use O'Brien potatoes (the frozen potatoes with added onions and peppers) just because it's my favorite. I had a mix of cheddar and mozzarella cheese. Used a 9x13 inch dish; it needed the 60 minutes, not less than that. Not sure what to add for the kick. They would be happy with salsa on the side, I guess. But definitely a keeper for breakfast if not for dinner.... I don't need a lot of kick to get me going in the morning....

Honey Baked Chicken II

Loved it! My family loved it. It's a lot of honey for us though (sugar/calorie-wise), and while I felt good about using half the butter, I didn't cut back on the honey. The honey is what makes it! I also added an extra 1/2 teaspoon of curry, based on other reviews. To go with the chicken I served brown rice with dried cranberries and slived almonds. The meal was a big hit. Not your average baked chicken.

Double Chocolate Brownies from Egg Farmers of Ontario

I wish I had pulled these out of the oven at 25 minutes. Toothpick didn't come out clean then, and at 30 minutes it did, but 30 minutes was too long. I think they might have been perfect at 25. My guests loved these brownies when they were fresh. A day later a little microwaving helped soften them. I had some toffee sprinkles that I sprinkled over the top of the brownies, and these were a big hit too.

Greek Pasta Salad with Roasted Vegetables and Feta

My husband and I both loved this salad, which we ate as a meatless main dish. We did add a lot more arugula than the recipe called for, and likewise with the balsamic vinegar (1/4 cup). I also added toasted walnuts for a little crunch. I used sundried tomatoes packed in oil because that's what I had, and I used some of that oil in the salad instead of the last 2 tablespoons of olive oil. I'm thinking this summer we'll roast the vegetables on the grill so we don't heat up the kitchen so much. My husband says 5 stars for sure!

Scalloped Cabbage Casserole

I followed the recipe except that I used real cheese instead of processed, and after reading other reviews, I added horseradish (about 2 tsps.) to the white sauce. Still, this recipe takes a lot of prep! It felt like I was dirtying every dish I owned. Next time, I might try to streamline a little. The finished dish tasted really good and made quite a lot really. Definitely a weekend dish because of the prep and cleanup involved. We served it with sauteed chicken breasts and baked sweet potatoes.
