Shredded Beef Chimichangas

This was so good and so much fun to make. I had a cheap beef roast and just decided to try this recipe. I added a little more chili powder (just to taste). I figure everyone needs to adjust this to their tastes. Also, I put shredded cheese inside before I rolled them up. Served with some refried beans and cheese. Wow! Throw in some tortilla chips and salse and it makes for a wonderful movie night with the kids. Thanks so much for submitting.

Thick Cut-Outs

Taste is excellent but I had a hard time getting my shapes to come out right because the cookies fluffed so much. The stars came out perfect but more intricate shapes did not. All in all a great recipe. Will try again. Maybe I did something wrong.

Deluxe Mashed Potatoes

Excellent. I served with Rib Roast and was the perfect compliment. I did use green onion tops chopped and baked with a layer of shredded cheese on top. Could not have been better.

Foolproof Rib Roast

Wonderful. The timing was perfect. Was very worried about cooking this expensive piece of meat. I used a 5lb boneless ribeye for my husband's birthday. Rave reviews. Thanks so much for a method to be used several times in the future.

Twice Baked Sweet Potatoes

Wonderful recipe but not for dinner. I like a baked sweet potato with steak but not this one. It is way too rich and sweet. Tastes wonderfully decadent but for a desert not a side dish. Will try next time just scooping out of skin and baking in a pie shell. Heavenly.

No Bake Cheesecake I

One of the best recipes I've tried. Taste is excellent. I don't use grahams, just sandies but I only use a little butter. Also tried just crushed sadies on the bottom and whole cookies lining the edges. Looks great and family loved it. No fresh berries in the kitchen so I used frozen (thawed) berries and my hand held blender. Made a wonderful topping to drizzle over.

To Die For Blueberry Muffins

Family loved them. I used vanilla. I thought it was better but just a personal preference. All in all a keeper. Will use many more times.

Old-Fashioned Coconut Pie

Giving this recipe 5 stars because my family didn't even make it to the meringue. Smelled so good they didn't even let it cool completely. Tasted every bit as good as it smelled. I cook a LOT (6 kids) of different things for variety. Eight people can't be wrong. Maybe next we'll make it to meringue.

Pear Honey

Folled this recipe exactly the first time. Turned out wonderful. Very tasty. Tried again but was very tired so put it in slow cooker on low over night. Surprisingly tasted great. Much richer and darker in color but wonderful taste and aroma. Also, I used a hand-held electric blender for smoothness. Worked great. Excellent use of pears for gifting. Thanks for submitting.

Grandma's Pear Preserves

Taste was ok. Way too much spice. Allspice is overpowering. Mine needed a little extra cooking time or something. It was too runny. Cooked the first batch and threw it out. Did not set and tasted too strong. Second batch was better. Used only half the spices and added more pectin. Will try again maybe with no spices. I really liked the flavor before adding anything more than brown sugar at the end. Can be a great recipe to "tweek" to your own personal taste.
