Creamy Chocolate Cupcakes

A very tasty little cupcake, but a few notes: There was way more batter than I ever needed and I did come away with about sixteen cup cakes. A few people have had dropping and density issues. I ended up refrigerating the batter as I made the cupcakes in two rounds. The cooling process made the filling come out heavier and thicker which I think helped my dropping a great deal, although topping them with batter (as suggested above) probably would have been perfect. Also, I did add a touch of flour, probably a quarter cup, to thicken.

Lemon Zucchini Bread

I think it was good bread. I used whole wheat flour as well as apple sauce instead of oil for mine, but it could have used a little something. I think some walnuts would have made all the difference. I didn't find it overwhelmingly sweet as some did either, but my measurement was a titch short of 3/4 cups.

Chicken Marsala

I screwed this one up and it was still really good. Seeing as I made it originally when I was living in a dorm, I was apparently without anything to flatten the breasts down when I decided to make this, nor did I have a cover for my frying pan. The result was too much reduction (almost 0 left over except for the original oil) and longer cooking times to make sure the thicker chicken was done through. However, tail pieces where the breasts were thinner showed just how good this recipe could have been! As with others, I used extra marsala instead of sherry as well as adding a touch of light cream. I left out the mushrooms as fiance is not so keen on them. I'm going to make again tonight and this time I'm adding a little broth along with some garlic as suggested here. Now that I have my own kitchen, though, I can't imagine it's going to turn out anything but amazing.

Steak Salad (Ranen Salad)

Tasty salad but I found I could only taste the vinegar in the dressing. And I *love* vinegar. I did leave the mixture overnight as dinner got pushed off that night, so I don't know if that allowed the vinegar to steal the show? The steak could have used some marinating as well as others here have done. My own mistakes included using dry feta in a bag--I hadn't tried it before and it does not have HALF the flavor of real wet feta in brine.

Graham Moist Lemon Bars

I made a few adjustments which were the only things keeping me from rating the original recipe with five stars. The graham crust required no mental adjustment for me--this is how my mom always made them! Basically because I wanted a really tart square, I added a splash extra lemon juice (regular ole bottled stuff) and did like nora and only added 2.5 cups of sugar. Added an extra tbsp or so of flour to the filling; it seemed a little watery. I also omitted the confectioner's sugar. As I say; I wanted 'em tart. Began eating them out of the pan only mostly cooled--a very good sign! In fact, I was shocked hear my ultra-picky fiance making happy noises while he ate.

Coffeebar Chai

After many, many brews, let me update this with the most recent version of "my" form of this recipe which still uses SKID27's concentrate base. I use 4 cups of water, boil, add 5 tea bags (3 regular, 2 decaf), let boil for a minute or two and then remove. I drop in double the honey, vanilla and then double the called-for spices. I've upped the cinnamon to four half-size sticks, grinding fresh nutmeg into a tea ball with the other loose spices including 8-10 peppercorns. I also just recently added 6 allspice berries and 2-3 medium-size pieces of star anise. I feel the anise really rounds out the whole set of flavors and finished this tea. If I have ginger in the house, I cut off a quarter-inch chunk of that and throw it in too. I find it preferable to use whole spices as much as possible to cut down on the inevitable grit in the bottom of the brew when using ground. This is my final product, I think, and a really good cup of tea.

Banana Chai Bread

Love this recipe--a really great bread comes out, though I would hesitate to call it serious banana bread or say the chai flavor comes out that much. I used the chai concentrate SKIDZ7 explains in the Coffeebar Chai recipe on this site (no milk added--I was hoping the spiciness of the chai would come out more that way). Either way, a great tasting loaf. Though as others mentioned, I did reduce the cook time by about 10 min and I'm glad I did. The cream cheese really comes through to give it a wonderfully different texture. I did throw about a quarter cup of walnuts in as well just because I love that extra crunch in any fruit/veggie loaves.

Mouth-Watering Stuffed Mushrooms

These were awesome--really good for someone who is not huge on spiciness, like me. The cayenne definitely gives it a little something special. I used two cloves of garlic, which was probably a little more than called for, but I love garlic. I'll probably experiment with bacon or crab meat another time. Wonderful as-is, though.

A Plus Carrot Cake

I made a slightly healthier version of this carrot cake with varied add-ons and it came out great (and plenty moist, as seems to be the thing for this recipe). First, a cup of the oil became applesauce. Split the flour half whole wheat and half white. Honestly, I didn't notice the whole wheat at all and I might use that for the whole thing next time. Half the sugar was white and half was brown. I may cut back on the white by about half a cup next time because it was plenty sweet. If you were going to put icing on this I think the sugar would be over the top (I didn't ice, though). My additives included raisins, walnuts and coconut though I think next time I would use half a cup of raisins and a full cup of walnuts (I didn't quite have enough for a full cup this time). As I say, even without the pineapple, it was very good!

Laura's Quick Slow Cooker Turkey Chili

A-1 chili as it was--and healthy! Changes include leaving out the veg oil--turkey browns just fine on its own. Added a grated carrot in there for a little extra somethin'. I left this to simmer for two and a half hours on the lowest setting (stirring occasionally) in a large pot as I don't have a slow cooker. Great stuff!

Creamy Mushroom Soup

Really excellent soup. I used all 2 cups portobellos and added about another 3/4 cup of buttons. Added 2 cloves of garlic and a tsp and a half of thyme. Might reduce it to one tsp next time. Also added a full 2 c of broth. Pureed most of the mushroom mixture as per a reviewer suggestion after it was done cooking; I prefer it with less whole chunks of mushroom. Omitted cinnamon topping. Great stuff!

Too Much Chocolate Cake

Great cake and super easy. I've made it both in layer form with whipped ganache for icing and in bundt form (peanut butter chips at another reviewer's suggestion) with confectioner's sugar dusting. Pretty much awesome any way.

Best Ever Banana Bread

This is actually identical to bread I used to make from a Fitness Magazine which I lost years ago. In the magazine, they'd made healthy substitutions which I mimicked. To make a super healthy loaf, I used whole wheat flour, only 1 c sugar, applesauce instead of oil, skim milk and lemon juice instead of buttermilk (that last since I never have it). It still tastes awesome (some mini chips in there would be good for a treat) and is perfectly moist and plenty sweet. Leaving it wrapped up in saran gives the outside that slightly tacky gooeyness to the top crust. Yum!

Sesame Seed Green Beans

Good idea, but the additions to the beans are all overkill in proportion. I used half of the sesame seeds and my beans were swimming in them. Same with the soy sauce and the amount of oil was totally unnecessary.

Asparagus Roll-Ups

I found by the time everything was finished baking these were fairly blah in terms of flavor. The asparagus was overcooked in my opinion and the cream cheese mixture really over powered it.
