Easy Vegetarian Corn Chowder

I loved it. I added about two cups of potatoes because I love them in chowder, more carrots, thyme, garlic powder and a dash of dill instead of nutmeg. And used 1 can of evaporated milk instead of the other two because that is what I had. Had to cook longer because of the potatoes and extra carrots but other than that followed the cooking directions. The extra creamed corn gives it a nice sweetness. It was great.

Blueberry Pie

My first ever pie!!! This was so yummy, perfect balance of sweetness. People couldn't believe I didn't use pie filling but it was so easy! I do recommend using equal tbls of cornstarch to each cup of berries. Other than adding 2 tbls lemon juice and raw sugar everything was the same. I didn't even notice the cinnamon so it is def not overpowering. I did an egg wash and sprinkled raw sugar on top and then covered the top for a good part of the time with foil because it had so browned quickly. And having some foil under the pan in case it bubbles over is good. Mine did.

Fresh Strawberry Upside Down Cake

SO I think I did something wrong because the cake was done on the top and really mushy at the strawberries. It was not fluffy. I think my strawberries had too much liquid in them, which soaked into the cake and made it dense and mushy. One reviewer said to make sure the strawberries had a lot of juice but you need to be careful with that! I will try again but use some sliced and mashed combined.

Amish Breakfast Casserole

This was so yummy. As one reviewer said it's not heavy at all. I used turkey bacon instead and o'brien potatoes. I also put in a few more eggs and egg whites and a dash of seasonings. I made it for Mother's Day brunch along with the Orange Pecan French Toast and some fruit salad. Perfect meal!

Orange Pecan French Toast

This was amazing. I made it for Mother's Day brunch. The only thing I did differently was cut the bread thicker and soaked it before I put it in the dish. By doing that I should have baked it longer as some pieces in the middle were not done enough. It was a huge hit!

Hot Artichoke and Spinach Dip II

I made this for new years and it was a huge hit. It goes fast so you may want to double it. I kept it in a mini crockpot so it stayed hot all night. Modified according to other reviewers, added more spinach, served with bagel chips and tortilla chips.

Hearty Corn Chowder

The dill and evaporated milk are key elements of the recipe. I modified this but it was a great guide for me to follow. I used turkey bacon instead and no sausage, 2 potatoes with the peel on, 2 stalks of celery (although next time I will only use one stalk and dice it. 2 cans corn, 2 cans creamed corn, 1 box of chicken broth instead of water, garlic powder, thyme, onion powder, spike seasoning and the dill. I also thickened it with instant potatoes. Everything I used was reduced sodium which allowed me to salt it to taste.

Sour Cream Banana Coffee Cake

Very good!!! I doubled it and added some flax seed and wheat germ and used white/whole wheat flour. I also subbed yogurt for the sour cream and I used 3 bananas total. My husband won't stop eating it.

Key Lime Cake II

This was yummy!!! I couldn't find key limes so I just used bottled lime juice. Still very good! I used applesauce and egg beaters to make it healthier, but the egg beaters made it a dense cake, more like a pound and not a bundt cake. It was a huge hit at my bbq! I served with the Triple Berry Sorbet recipe for a nice compliment to the sweet/tang.

Triple Berry Sorbet

This was a great recipe. I used fresh strawberries instead of cranberries as I wanted the sorbet a little sweeter. I also used blue agave nectar instead of white sugar (I use that in all my ice cream recipes). I recommend straining though as there are a lot of seeds. My friends at the bbq raved and the kids couldn't get enough "ice cream"!

Easy Slow Cooker Meatballs

I used ground turkey and baked them in the oven for a few to brown them. The end result was wonderful! I basically just used jarred sauce, but the flavors in the meatballs were amazing. Great way to add flavor to bland ground turkey.

These were excellent. Friends suggested adding coconut, which would be interesting, but possibly overkill. I drizzled a sugar glaze like the photo and it gave it a nice touch.

Mulberry Pie

This is my first pie! I realized a few weeks ago that we had a mulberry tree in the backyard. This was the best recipe I found on any site for a mulberry pie. My husband disagrees, but I think the sugar could have been cut back. I wish I had listened to the reviews. The berry is tart, so I thought it needed all the sugar. Also, I took the stems off, mostly by snipping them off with my fingernail. It's time consuming but worth it I think.
