Artichoke Spinach Dip

Awesome tasting spinach-artichoke dip! I took the advice of other reviewers added some garlic cloves and sauteed with the butter. I only used 1 pkg of cream cheese and 1 pint of sour cream. I like to taste the spinach and artichoke, and would like to try adding an extra can of artichoke next time. Filled my 1.5 qt corningware perfectly, even with the reduced cream cheese and sour cream.

Italian Cream Cheese and Ricotta Cheesecake

This is my go-to cheesecake recipe. I've made it several times - mostly because my family always requests it :-) In my opinion, this recipe is a cross between a new york style cheesecake and an italian cheesecake. It's not too cream-cheesy and the texture is light. It's awesome and would definitely recommend this one if you're looking for a good cheesecake recipe.

Apple Crisp III

Reeeally good! My fiance and I were craving something sweet and I whipped this up. So quick and easy. I had all the ingredients, ended up using 2 large golden delicious apples. Thirty minutes would have been good enough for baking but I found that my topping was not browning. I put it under the broiler for a few minutes and it got a beautiful golden color quickly. Definitely will be making this again, especially during the fall!

Angel Chicken Pasta

Really good!! Really easy and quick so great for a weeknight meal. I skipped the chicken and just went with veggies so no need to bake in the oven. I used a frozen package of broccoli/mushroom mix. I felt like it wasn't enough sauce so I ended up doubling the recipe, but since I didn't have a 2nd can of cream of mushroom soup, I used cream of chicken and it still tasted great! I just mixed ingredients as instructed on stovetop and cooked until the frozen veggies were done. Towards the end, I added grated parm cheese until mixed and then topped over rotini. Awesome!

John's Crabby Caps

These are awesome!!! I agree they are a bit salty, but the second time I made them, I did not add any salt. I used a combo of grated parm and freshly grated pecorino. I like the taste of marsala with my stuffed mushrooms so I used a little marsala with the sherry (2 parts sherry to 1 part marsala). I also drizzled a little marsala over each stuffed mushroom and topped with freshly grated pecorino before baking. I served these a at a football party and they were a crowd favorite. Definitely a staple for all my parties now!
