Raspberry Sauce

Doesn't get much better (or easier) than this... My modification was that I was out of oj so I used some grape juice, I think any acidic juice would work and I threw in 1/4 cup of organic strawberry jam. I put it on a cheese cake, they family gobbled it up!

Maple Dill Carrots

Wow, yummy! Really nice change from just baked carrots. My only change was the addition of 2 Tablespoons of real maple syrup.

Butternut Squash Soup

I always add 1 tsp. of garam masala (not spicy) curry and 1/2 tsp of regular (spicy) curry to the onions just in the last 2 or 3 minutes. It's just spicy enough for me and the kids. I also occasionally throw in 10-13 cheese ravioli's, just to make it go a little further. Def. in the heavy rotation!

Saucy Lima Beans

So Yummy! Instead of using really fattening 1/2 & 1/2 I put a couple tablespoons of flour in with the melted butter and let that get a nice nutty brown, then added 1 cup of fat free milk. I sort of thought about using basil instead but I'm glad I used the dill weed! It was a nice change.

Vegetarian Phad Thai

Excellent! My family gobbled this up... Here are my alterations: I reduced the peanut butter to 1 cup, it was plenty for sure, and used lime juice instead of lemon which I highly recommend, so tasty! I also ran out of soy sauce so I used teriyaki sauce instead and omitted the sugar. Lastly I used about 1 tsp of curry powder because I was out of paprika too. My husband said, put this one on the heavy rotation!

Ranch Dressing I

My family loved is ranch dressing, it's waaaaay better than the store stuff and you can make if with all organic ingredients if you want. The only thing I did different is, instead of adding all the dry herbs (that don't have very much flavor) I used about 1/4 cup of pesto, it is sooo tasty!

Cali's Sinful Creme Brulee

WOW, so good! I've made this at least 5 times now and every time it gets gobbled up, even if I botch it somehow, I almost scrambled the eggs once and another time I spilled water into it when filling up the water bath and it still got eaten! One thing I always do is double the recipe, you will need to do this if you're serving more than 3 people. I also add a couple of tablespoons of milk to the chocolate so it will spread easier, then I stick it in the freezer until the creme brulee is ready. I find adding one extra egg yolk (to the doubled recipe) gives extra flavor. Make the creme brulee one day before but caramelize/torch the sugar just before you serve it. It's really good when it's just below room temp.

Delicious Chickpea Curry

very good, I just altered a few things... 1. I used garam masala for the spices 2. I got impatient and nuked the yams for 6 minutes then added cornstarch to get it to thicken up. 3. I added vegi chicken tasty!

Thai-Style Fragrant Rice

Tasty... I added 1 tsp. of brown sugar and I used brown rice instead of jasmine, which took a good 45 minutes more to cook and I had to keep adding water 1/2 cup at a time, so next time I'll precook the rice in a rice cooker... then I threw is some cubed tofu at the end.

Baked Teriyaki Chicken

I used extra firm Tofu cut into slices instead of Chicken and it's great. This is what i tweaked: Added double the garlic, 1 tsp. chili paste and seasoned rice wine vinegar instead of apple cider vinegar. I used 1/4 c. of sugar in the raw instead of 1/2 c. of white sugar.

Urban Legend Chocolate Chip Cookies

yummy, They all got eaten in 2 days... I thought I would make these a little bit healthy, haha so I replace 1 1/2 cups of the white flour with wheat flour and it worked out pretty good, the cookies ended up having more texture but nobody in my family even noticed.

Chili Steak Stir-Fry

pretty tasty, although a bit to spicy for my 3 yr old. I added a couple of Tablespoons of garlic hoisin sauce too... I would try it again with 1/2 the chili seeds. The morning star farms veggie steak & chicken strips are ok, the veggie chicken nuggets, patties, grillers & sausages are awesome for replacing real meat. Sometimes people can barely tell the difference. The strips flavor need a little work.

Peanut Butter Quesadillas

I've been making this for years with peanut butter and nuttella... yum oh, and I also toast the tortilla in the toaster on the lowest setting just to warm it up and make it a tad crispy.

Coconut Curry Tofu

I loved it! You can pretty much use any veggies you have on hand. I feared that it was going to be a bit spicy for my little one so I just so I use half curry power and half garam masala. TASTY!

this cake is bad ! much much better than store bought. I used it for the strawberry trifle on this site. I tripled the recipe to make 3 trifles for mothers day gifts and everyone raved!

Orange Beef-Style Tofu Stir-Fry

I thought this was pretty tasty even my carnivore hubby liked it a lot. I too made a few changes. 1. Sauteed firm tofu instead of frying and next time I'll leave the cornstarch off the tofu as well. 2. Added garlic and ginger to the tofu 3. I was horrified to see that I had run out of soy sauce half way through making the sauce so I used garlic hoisin sauce instead, it was yummy. 4. Used carrots, snap peas, onion & green pepper for veggies. 5. Added 1/8 teaspoon Sriracha hot sauce for a little heat by the way, this recipe only feeds about 2-3 adults with rice!
