Potato Skillet

Yum, yum, yummy! This is an easy one pot meal that is really delicious. I added onion and green chilies--mmmmmm! My whole family loved this, even my picky son who only eats cereal and pancakes!! Leftovers reheated were also good--will definitly be making this more often!

Fast English Muffin Pizzas

Oh my goodness--my father made these for me when I was a kid in the early 80's! Only we toasted the english muffins first, then added a slice of tomato, some italian seasoning, a slice of American cheese and then threw them in the oven/microwave to melt the cheese-- YUM YUM! My kids LOVE them! You can season with garlic or salt n pepper to taste also.

Mom's Shepherd's Pie

Very good "base" recipe! I chopped up some red onion and added to the ground beef while browning. I too added Lipton Onion soup mix. I didn't use the tomato sauce--didn't have any. Instead I added a little red wine--no worchestershire or ketchup. I used canned french cut green beans. The flour/water mixture held it together very well. For the mashed potatoes, I used instant and added butter and salt. I topped it all off with shredded cheddar cheese. This was EXCELLENT!!! A very good & quick meal for busy moms!

Carmel Apple Martini

This martini is delicious!! Added some caramel syrup to the rim of the glass--a bit sticky but tasty! Or you can even swirl some caramel syrup in the bottom of the glass before pouring the martini in--mmmmmm! Also try throwing in a Maraschino cherry.

Cream Cheese, Garlic, and Chive Stuffed Chicken

I was on this site looking for a bnls chicken breast recipe...something different from what I usually make. When I came across this one it sounded awesome so I decided to give it a try. I'm glad I did! This is a recipe that you could go nuts modifying! I used regular bacon...baked for about 10 minutes on a baking sheet. I then put the butterflied chicken breasts (I used 6 small) on the same baking sheet with the drippings from the bacon. I seasoned the chicken with granulated garlic, herbs, Adobo, and salt. I filled the breasts with a mixture of cream cheese, 2 jalapenos (seeded and chopped) and about 3/4 cup mozzarella cheese. I then wrapped each breast with 2 slices of bacon and baked for about 35 minutes. OMG...we LOVED this and will definitely be making again. My daughter had the leftovers for breakfast!!

Old-Fashioned Strawberry Shortcake

My family and I really enjoyed this recipe. I loved the sweet taste of the shortcake and it was very moist. The only thing I changed was I used skim milk in place of the cream (didn't have any). It was delicious! The kids even ate some WITHOUT the strawberries!

Annie's Fruit Salsa and Cinnamon Chips

For the effort, I thought this was just an "okay" recipe. I used frozen strawberries instead of fresh (cheaper!) and strawberry preserves (my family are strawberry junkies!!). My kids thought this was pretty good though.

Sunshine Chicken

Oh wow...this was GOOOOOD! It was quick, easy, and delicious! PERFECT for a busy mom such as myself. I didn't make too many changes...I used honey because I didn't have any corn syrup and I added a little more garlic and a dash of liquid smoke (hickory). My kids LOVED this. I will definitely make again. Thanks!

Jalapeno Scorpion Pigs

These were pretty good only I changed it up a little bit. I don't like olives...AT ALL..so I stirred some pesto into my whipped cream cheese. I don't think the shrimp really added much extra. I bacon wrapped a few shrimp and baked them on a cookie sheet with the jalepenos--VERY GOOD!

Bob's Stuffed Mushrooms

These were AWESOME!! I made these for friends we had over the other night and between four of us we ate 36 of these suckers!! I didn't use onion--just to save me a little time (but will use it next time to taste the difference). I used canned lump crab meat (2-6oz. cans), mixed my mozzarella right into the crab/breadcrumb mixture and poured one cup of butter over mushrooms before cooking. Incredibly easy and amazingly delicious I will be making these again soon!

Baked Pepperoni Dip

This was really good! Something different from the usual dips I serve. The friends I had over really enjoyed it. I used about 1 1/2 c of mayo and then about a 1/2 a cup whipped cream cheese. Yummy with Ritz crackers!

Chicken Lasagna Alfredo

I thought this was absolutely delicious. It was a definite great alternative to regular lasagna. My 12-year-old son was a bit turned off by the way it looked ("WHITE lasagna mom????") but he ate up every bite that was on his plate! I will be making this again and again. Thanks!!

German Spaetzle Dumplings

This was my first stab at this recipe...I say first because I do plan on trying it again. I doubled the recipe (cooking for 4) and my dough was super sticky and I wasn't able to use my spaetzle maker--it just wouldn't go through the holes--it was too sticky. I added more flour and tried again...still too sticky. I finally got frustrated and just cut them up into pieces (which were way too big) and boiled them. I then sauteed in bacon grease and added the bacon pieces. The flavor of the spaetzle was delicious, however, it was WAY too heavy since I made the pieces so big. Next time I will use some of the reviewers methods and hope these come out a bit better!

Maryland Crab Cakes II

This was a very good crab cake...not much filler and mostly crab...just how we like it!! I followed the tips of others and used old bay and omitted the hot sauce. My husband who is from Maryland kept saying, "MMMM....no more Red Lobster"!!! Delicious! Thanks!

Frozen Summer Slush

This was a very good recipe--my husband (who doesn't drink "girly" drinks) couldn't get enough of it. I used frozen limeade concentrate instead of lemonade--it's all I had) and I used Smirnoff vanilla vodka instead of gin. VERY GOOOOOOOOOOD!!!!!!

Beef Wellington

I tried this recipe for my mom for Mother's Day-its her favorite. I've never made it OR tasted it before. I used a bigger (3 1/2 lb.) tenderloin and increased the initial baking time by 10 min. and last baking time by 5 min. It turned out perfect! I seasoned the meat before baking and used a pate made from liverwurst(a recipe can be found on this site, but I used onion powder instead of chopped onions)-I found it did not take over the flavor of the beef-everyone agreed it added to it. I also added the red wine to the mushroom/onion mixture like others on the site. I forgot to buy beef broth but I had some powdered beef boullion & used that instead--I added some seasoning to it and it was really good. All in all, the meal turned out phenomenal--my mother said it was better than the restaurant she goes to and my father, children and husband LOVED it. The only thing I would've done different is make this into individual pieces due to it slightly falling apart when sliced. This recipe is to die for! Thank you so much!
