Spinach Stuffed Chicken Breasts

Reviewed: Jun. 12, 2008
This was a very tasty change from plain old chicken breast. It stayed moist and the flavors meshed together excellently. My 12-yr-old daughter kept saying, "I don't like it--I LOVE it!" Everyone kept asking for more! I did cook the bacon for a few minutes per some other reviewers. I didn't think the chicken was very greasy at all. I used fresh grated parm cheese (had no feta) and as large as my chicken breasts were, I would've liked to wrap 2 pieces of bacon around each. I did add some spices (Adobo and cracked pepper & herb) to the chicken before I stuffed them. This is a fantastic recipe--I can't wait to make it for friends!

Cheeseburger and Fries Casserole

Reviewed: Jun. 11, 2008
My family and I thought this was a very delicious & easy-to-make meal. I don't feel this needs change at all. I did bake the fries first as other reviews suggested--I also used seasoned hamburger (when I buy hamburger meat from the store I buy in bulk and divide it up and season it with Beef Burgundy seasoning and freeze). It was sooooooooooooo good! This was the first thing I cooked in a 9x13 dish that completely disappeared the same night! Great recipe--thanks so much!!

Potato Skillet

Reviewed: Jun. 6, 2008
Yum, yum, yummy! This is an easy one pot meal that is really delicious. I added onion and green chilies--mmmmmm! My whole family loved this, even my picky son who only eats cereal and pancakes!! Leftovers reheated were also good--will definitly be making this more often!

Mom's Shepherd's Pie

Reviewed: Jun. 5, 2008
Very good "base" recipe! I chopped up some red onion and added to the ground beef while browning. I too added Lipton Onion soup mix. I didn't use the tomato sauce--didn't have any. Instead I added a little red wine--no worchestershire or ketchup. I used canned french cut green beans. The flour/water mixture held it together very well. For the mashed potatoes, I used instant and added butter and salt. I topped it all off with shredded cheddar cheese. This was EXCELLENT!!! A very good & quick meal for busy moms!

Golden Baked Chicken

Reviewed: Jun. 4, 2008
Very good recipe for crispy baked chicken. I added a little zip by adding some hot sauce to the egg dip. I also added about a teaspoon and a half of cracked pepper and herb seasoning. Very, very, very good!!

Peanut Butter Cup Grilled Sandwich

Reviewed: May 29, 2008
This recipe was so so. I actually did make it over a campfire in a pie iron--maybe there is something else I was supposed to do? Not sure how much more could've been done. The kids didn't care much for it and my son is an avid peanut butter/chocolate eater. Won't make this again!

World's Best Potato Salad

Reviewed: May 27, 2008
I am a VERY picky potato salad eater and I have to say, this is now one of my favorites. I always thought my mom's was the best....until now (sorry mom). I doubled the recipe & did find it a tad bit sweet for my taste, but I will just add less sugar next time. Everyone else who ate it thought it was fabulous & I am now the #1 potato salad maker in the family!! Thanks so much for this recipe--I LOVE potato salad and now I can make it on my own instead of waiting for mom to make it!!!

Garlic Red Potatoes

Reviewed: May 12, 2008
These potatoes were loved by everyone I cooked them for. My father told me to give my mother the recipe! I did find I had to cook them longer, which was no big deal. They were worth it!

Beef Wellington

Reviewed: May 12, 2008
I tried this recipe for my mom for Mother's Day-its her favorite. I've never made it OR tasted it before. I used a bigger (3 1/2 lb.) tenderloin and increased the initial baking time by 10 min. and last baking time by 5 min. It turned out perfect! I seasoned the meat before baking and used a pate made from liverwurst(a recipe can be found on this site, but I used onion powder instead of chopped onions)-I found it did not take over the flavor of the beef-everyone agreed it added to it. I also added the red wine to the mushroom/onion mixture like others on the site. I forgot to buy beef broth but I had some powdered beef boullion & used that instead--I added some seasoning to it and it was really good. All in all, the meal turned out phenomenal--my mother said it was better than the restaurant she goes to and my father, children and husband LOVED it. The only thing I would've done different is make this into individual pieces due to it slightly falling apart when sliced. This recipe is to die for! Thank you so much!
