Broccoli Cheese Soup V

Reviewed: Feb. 1, 2011
absolutely delicious!!! So simple but so good! I omitted the onions because we don't like onions. And I used black pepper instead of white because I didn't have any. I made the rue with the butter & flour & milk & then added slices of processed cheese (about 6-7 slices). Meanwhile I steamed the broccoli in water. When the cheese sauce was thickened I added 4 chicken boullion cubes for flavor. Then I added the broccoli & simmered well. It was so yummy!!!

Hot Cheesy Spinach Dip

Reviewed: Jan. 13, 2011
This would have been good had there not been so much grease floating around on the top! UGH!!! Luckily I brought this to a potluck that another girl made the same thing & hers was too dry so we combined the 2 & it was perfect. Next time I think I'll add cream cheese, and not mayo & cut the butter in half, and use more mozzarella (I had more parmesan cheese than mozzarella on hand). It definitely has potential & I will probably add artichokes in it. Overall the taste was fantastic! Just really runny!

Snickerdoodles V

Reviewed: Jan. 10, 2011
This recipe was so easy & they are so good! I did substitute butter for shortening & I cut the salt in half. I also added a tsp. of vanilla. They are delicious!!! Next time I think I'll just omit the salt as one of the other reviewers said it has a salty aftertaste just a little. Overall, great though!!!!

Alfredo Sauce

Reviewed: Jan. 6, 2011
Wow this was so EASY! And so delicious! I have attempted making homemade alfredo sauce before & it hasn't turned out. So I was so happy when this recipe did! I made a couple changes for what I had on hand. I only had whole milk so I used 3T. butter & 2 T. flour & made a roux. Then I added the 1 cup whole milk & a pinch of nutmeg & salt to taste. Then I added 2/3 cup grated parmesean cheese & then the egg yolk. I wasn't going to add the egg yolk but it made it so much more smooth & creamy! I ended up having to thin it a little with some more whole milk because it was so thick! Wonderful recipe! Thanks so much!

Gingerbread Cupcakes with Cream Cheese Frosting

Reviewed: Dec. 7, 2010
These tasted really yummy, but when I baked them they rose & then fell & sunk in bad. They looked awful. Luckily I wasn't making them to take to anyone! They do taste wonderful though, so at least I can still eat them!

Banana Oat Muffins

Reviewed: Nov. 11, 2010
These were WAY TOO buttery. I read other reviews but didn't think they could possibly be so greasy. Well, they are. They either needed more flour or less butter. They tasted really yummy, but they fell flat in the middle I think from too much butter. Kind of a waste of ingredients. I'm going to eat them still though because I hate to throw food away. I will make these again, but cut butter down or just add more flour.

Chicken Florentine Casserole

Reviewed: Nov. 5, 2010
This was WONDERFUL!!!! So flavorful & tasty! I wasn't sure we'd like it because me & my family don't love cooked spinach, but you couldn't even taste it, just gave it great texture & color! I cut up the chicken, seasoned it & cooked it in a fry pan on the stove in some oil first. I finely chopped up frozen spinach (my family doesn't like big chunks of spinach) & put in casserole dish first. Then I layered the cooked chicken next. Then I mixed the sauce ingredients in the frying pan & poured over chicken & spinach. Then I grated mozzarella & sprinkled over that. Baked in oven at 350 for 30 minutes until bubbly. Smelled HEAVENLY!

Wheat Germ Whole-Wheat Buttermilk Pancakes

Reviewed: Sep. 12, 2010
These had NO flavor, the batter was way too runny & cooked into flat pancakes. I ended up adding 1T. sugar. I'd rather just add some wheat germ to the Truck-Stop Buttermilk pancake recipe. Those are heavenly!!!

Summer Squash Bread

I'm so happy I found a recipe to use the buckets & buckets of yellow crookneck squash I keep picking! It was moist, sweet & yummy! It would be even better with a sweet glaze or something!

BEST french toast! I won't ever make my old stuff again! I think what makes it so good is the flour, sugar, vanilla & cinnamon! This one's a keeper!

Savory Pork Roast

Reviewed: Jul. 12, 2010
SOOO TASTY! It was tender, juicy & so flavorful, but I think that was due to the fact that I also sprinkled dried rosemary & thyme & a little garlic salt on it too! I drizzled a little olive oil on first before I rubbed the seasonings in. It was heavenly! My son ate thirds!

Oatmeal Chocolate Chip Cookies III

Reviewed: May 29, 2010
SOOOO GOOD! I think I've eaten 10 so far today! I had to add 3/4 cup more flour though so they didn't flatten out like other reviews said. And I reduced cooking time to 9 minutes & it was perfect! I don't like rasins in cookies, so I just added 2 cups of chocolate chips. Super yummy recipe! Thanks!

Lower Fat Banana Bread II

Reviewed: May 12, 2010
Seems like this COULD be good AND healthy. I think it needs FOUR bananas instead of two. And maybe a little more sugar. Maybe 2/3 cup white sugar & 1/4 cup brown?? I made this with half wheat flour & half white flour, I also added flax seed. & 1 1/2 tsp. cinnamon. I also added 1/2 tsp. more baking soda since some reviews said it was a mush mess & didn't rise well. Mine rose perfectly & looked great! It really was pretty moist so I don't think it needs any more oil. Good recipe but next time I will add a little more sugar & more bananas!

Carrot Oatmeal Muffins

Reviewed: Apr. 28, 2010
Super easy recipe. I cut the sugars to 1/2 cup, and added half apple sauce for some of the oil. I omitted the coconut & raisins because I didn't have them on hand. I also added some ground flax seed with the oats. I reduced the cooking time by 5 minutes because my oven cooks hot. These muffins are healthy & delicious! The cream cheese in the middle is what makes them so good! They aren't dry or flavorless at all! Wonderful muffins!
