Chicken Pesto Paninis

We enjoyed this very much! I used a round loaf of French bread sliced for a good size sandwich, chicken from the deli and homemade pesto. I took the meat and cheese out of the frig about 20 minutes before grilling to warm up a bit. I grilled on medium until the cheese began to ooze. Very nice recipe, thank you.

Potato Pancakes II

I made these for brunch today from leftover Thanksgiving mashed potatoes. Very good! I did add 2 eggs and scallions. Do cook these at med to med/low so they cook through and crisp without burning.

Day-After-Thanksgiving Turkey Carcass Soup

I thought this was intriguing with the addition of stuffing to it. It does give the broth a much heartier consistency. I followed the recipe for the most part. I only added a teaspoon of poultry seasoning an I wish I had headed someone's advice to add only one cup of rice. I used 1 1/2 cups and it was just a bit much. I added more chicken stock. But, all and all, I woul make this again next year. I have (6) 2 pound deli containers for the freezer and enough for dinner.

Bacon for the Family or a Crowd

Can't believe I never reviewed this!! This is the only way I cook bacon anymore. No splattered stove top to clean. Line the pan with foil. Let the grease cool, fold the foil and toss! I also notice I don't have the linger of bacon in the air for 2 days. Great idea!

Chicken Pot Pie II

This our new favorite pot pie! I used a little more than 2 cups leftover Thanksgiving turkey. I used a bit more salt and pepper and a good splash of Red Hot. My stepson ate almost 1/2 the pie. I am hoping the last piece is still there at lunch time! :)

Silky Sweet Potato Puree

These were just wonderful! I made them Tuesday to serve Thanksgiving Day. So sweet and the texture is dreamy. I was done with over sweetened, doctored sweet potatoes; these don't need a thing! I used 1/2 the liquid and used Fat Free Half & Half and just 2 tablespoons of butter. Wonderful!!

Smoked Fish Dip

This is a really nice dip for any occasion! I added a bit more seasoning but I did not add liquid smoke as I wanted just the smoked flavor of the whitefish to shine. Healthy and tasty!! Thank you!

These were good. They stood up well and were moist and attractive. I would use butter shortening next time or do 1/2 and 1/2 butter and shortening. I missed the buttery flavor.

I had high hopes for this being an interesting combination of ingredients and healthy. I made this exactly as stated and felt it was overpowering and not attractive. I took it to Book Club and it was barely touched.

Sesame Beef Tenderloin

This was very good! I added about a teaspoon of sesame seed oil to the marinade. I also did not cover with foil, I feel it steams the meat and I don't care for that. Otherwise, very nice! Thank you!

Asparagus with Cranberries and Pine Nuts

Loved this! I toasted the pine nuts and gently steamed the asparagus ahead of time. Made it quicker to make. A beautiful dish for the holidays, too! I think I'd add feta or goat cheese next time for fun. Thank you!

Turkey Goulash

Update: I have made this several times since the first review and it has become a favorite basic dinner. I use half the pasta and top with a dolop of sour cream. ////This was good but I agree with other reviews, there is was too much pasta. I left out about a 1/4 of my pasta but I wish had left out 1/2. I added additional Italian seasoning. It's pretty basic but good. A good dish for kids, too!

Onion & Garlic Biscuit Flat Bread

I finally remembered to buy biscuits to make this savory delight! So easy! Because it was just the two of us, I bought the little biscuit package of 6 oz with five small biscuits and halved the mixture. I didn't have scallions so I used fresh chives, which we loved. Thanks, Bellepepper, a nice and easy little roll to serve with almost anything!

Beef Roast in Red Wine (Carni Arrosto al Vino Rosso)

First, let me say this was one of the best slowcooker pot roast dishes I've ever had... but I did head the advice of others and altered the liquid and spices, as written would have been too much. I used just one cup wine and 2 bouillon cubes (skipped extra salt) instead of 2 plus 1/4 cup stock. I added just 1 1/2 - 2 tablespoons of Italian seasoning instead of all the others (it contains all of the herbs called for +). Those changes by themselves would have been wonderful, however because there was still a good bit of liquid, I decided to add 2 cups baby carrots and 2 Baker's cubed, 2 hours before finishing. I put the meat and vegetables in a Corning dish to serve, covered and kept warm. I put the juices in a sauce pan and added a cornstarch slury to thicken. I loved the tomato/potato/carrot mixture with a wonderful gravy. Thank you!
