Marzetti® Coconut Breaded Chicken with Crunchy Fruit Sauce

Reviewed: May 1, 2011
The flavor was good on this but I expected a bit more crunchy crust. I even did them on a rack. The dipping sauce was very good but not sure it was the best choice for coating the chicken in first. Something about the chicken seemed bland.

Quiche Lorraine I

Reviewed: May 1, 2011
Outstanding! I made this exactly except using some other's suggestion to use 1 1/2 cups cream. Not sure it made that much difference with my pie plate but it was really wonderful! Made it Sunday morning with fresh fruit and hubby commented it was a perfect brunch menu! Thank you!

Blueberry Pound Cake

Reviewed: May 1, 2011
Update: i did make this as written and it doesn't get any better than this! So moist and delicious! //// This was wonderful!! I followed the recipe to the letter with the exception of using strawberries (needed to use them up) and using a bundt pan. I left the berries, cut in smaller pieces on a papertowel to absorb moisture and then followed recipe to toss in flour. Will be making this again with blueberries or other fruits for my husband who loves sweet cakes and breads. He even remarked how much he liked the sugary "crust". I did wrap this in saran as it cooled to keep in the moisture. Thank you!

Mexican Blackened Corn

Reviewed: Apr. 20, 2011
I made this for Recipe Group. It was very good! Next time, I would use a HOT cast iron skillet. I used a Cuisinart Stainless pan with just a touch of oil and just didn't get the blacken results, though it browned nicely. The flavor was great, however, I used 1/2 the cayenne called for and that provided enough heat for me. Cotija was not available so I used a Mexican blend. Thanks! Nice side to compliment any Mexican dish!

Broiled Tilapia Parmesan

Reviewed: Apr. 16, 2011
Update:I got over it and made this as is and it is wonderful. I still have to use real onion! Very good! Before I I subbed lite sour cream for the butter. I also minced about a tablespoon of onion instead of using powder. Hubs really liked it and he's not a big fish eater, said he's like to have it again! Thank you!!

Lemon Dill Rice

Reviewed: Apr. 16, 2011
This was actually very good but based on other's reviews, I didn't bake it. I sauteed the onion, added the rice to toast, used chicken broth and cooked the rice as usual. Served with broiled Tilapia.

Chickpea and Quinoa Salad with Lemon and Tahini

Reviewed: Apr. 16, 2011
This is very good but you have to like Tahini to enjoy this as it is a major part of the dressing. The fresh lemon really brightens this. I used a minced red onion in lieu of the shallot as I didn't have one. I would probably add some celery, carrots and cherry tomatoes to this next time foer a bit more crunch and color. Thanks, Cara!

My Guy's No Sissy Ham & Cheese Quiche

Reviewed: Apr. 12, 2011
Very nice, Carrie! We enjoyed this! I used ham and FF Half & Half. I did partially bake the crust as you have suggested and used crust guards to keep the crust from browning too much. Loved the consistency of the custard; nice and smooth.

Mediterranean Quinoa Salad

Reviewed: Apr. 11, 2011
This was outstanding! Have made this several times since my original review and love it. I always use chickpeas instead of chicken. I sometimes add artichoke hearts. Be sure to use fresh lemon juice, it makes it. I didn't use all the oil & balsamic so mix and add to your liking. Thanks, Colter! This is a keeper and will be highly recommended!

Cinnamon Swirl Kuchen

Reviewed: Apr. 10, 2011
This was delightful and attractive. I used a bundt pan. Some people complained it was dry. Be sure not to over bake!!! I have a convection oven, baked it at 325 and took it out after 55 minutes. It would have been dry if it had gone longer. Thanks, great recipe!

Wow, this was awesome! I followed the recipe, however used half the oil but added a bit of butter. I also marinated the prawns/shrimp in "Basil Shrimp" recipe on here before starting (use less dijon). This was wonderful and I wouldn't hesitate to make it for company! Even my husband loved it! Thank you!

Orzo with Parmesan and Basil

Reviewed: Mar. 23, 2011
Update I've been making this often as written except half the butter and family loves it! / I liked the idea of toasting the orzo first. I think it lent a nice flavor. Next time, I'll use 1/2 the butter. I didn't have fresh basil but was making a another dish with Simple Garlic and Basil Pesto (all pine nuts) and added 2 teaspoons of that instead. Yummy! Thank you!
