Key Lime Cheesecake I

I made this twice in the last week, one being a trial for a dinner at home before taking it to a luncheon. Both times it was well received and enjoyed by all! Even though it is a cheesecake, it has a nice refreshing "light" flavor. I studied the tips and suggestions and did add an extra egg, 8oz block of creamed cheese and reduced the key lime to 1/2 cup. I cut a circle of parchment for the bottom of the pan and it easily moved to the plate from the pan. I placed a large pan of water on the shelf below the pan, turned the oven off after an hour and left it sitting in the cracked" oven an additional hour. I refrigerated over night, sliced with a clean hot knife. For the luncheon, I sliced, then decorated the cake with fresh lime on each slice so it was easy for people to remove a piece and still have it look nicely presented on their plate. This will be a nice dessert to have in my pocket that can be made a day or 2 ahead of time and it looks like it came from a restaurant!! Thank you!

Grilled Marinated Swordfish

We were pleasantly surprised by this! I was worried about all the poultry seasoning but it really added a nice flavor! I combined a bit of sour cream with minced onion, horseradish and dijon to make a garnish/sauce that went nicely over it. I would make this again! Thank you!

Raspberry Cream Cheese Coffee Cake

UPDATE: I have made this several times now and wanted to share a tip for working with the sticky dough. Spoon the dough out of the processor placing clumps around in the greased springpan. Lay a piece of plastic wrap, big enough to cover the the pan and more, on the counter and spray generously with Pam. Place wrap over pan, Pam sprayed side against dough, and work the dough out flat and up the sides. The wrap will pull right off with no mess and the dough will be nicely shaped! Also, put the preserves in a baggie and warm gently in warm water. Snip a corner and squeeze the jam onto the dough in circles. Makes it easier to spread out. ORIGINAL REVIEW: Bellepepper made this for Recipe Group and recommended it to me. All I can say is, "Wow!", this was really wonderful. I made it the day before, wrapped and stored in the frig. I took it out about an hour before serving, put an almond drizzle over it (confectioner's sugar, a bit of milk and few drops of almond flavoring) and garnished with fresh raspberries around the top and and plate. I haven't, and wouldn't change a thing, other than to try different jams. This is a keeper! Thank you!!

Amish Breakfast Casserole

This is a great "go to" recipe for an easy breakfast or brunch dish. The recipe is requested often. Have also made it for holiday mornings, served with fresh fruit and muffins for a carefree, hearty breakfast. Don't let the cottage cheese scare you, it is negligible once cooked and keeps the casserole nice and moist.

Tangy Potato, Green Bean and Bacon Salad

These were delightful, Don! I had some Haricot Beans, baby Yukons and some cooked bacon in the freezer which made this very easy. What a great side to accompany grilled NY Strips. The dressing is sooo yummy! I made it earlier in the day so I put them in the micro at 30% for 3 minutes, tossed and repeated until they were slightly warm again. I sprinkled a few bits of bacon I had set aside and some chopped fresh parsley for a nice presentation. I'm not sure what I will be grilling for Labor Day yet but these will definitely be on the menu! Thank you!

Sour Cream and Chive Mashed Potatoes

I don't usually follow a recipe for mashed potatoes but thought I would follow this recipe exactly for kicks (I did use scallions). It was fabulous! Just the right mix of ingredients. I served this with Slow Cooker Turkey from AR and had very little left!! Thank you! So simple but worth following!

Slow Cooker Turkey Breast

Another stellar review for this dish. "Excellent" was the comment. So flavorful and moist!! I only had a 3 pound boneless breast and was worried about it sitting in the bottom of that big crock pot, so I threw a few carrot and celery pieces on the bottom and added a half cup wine. I'm really not sure it was necessary but it made me feel better!! Lol! The only thing I would do differently is put 2 boneless breasts in. I had plans to make turkey pot pie and turkey salad and there isn't enough left! Thank you I will definitely make this again!

Crustless Spinach Quiche

This was very good! I didn't have Muenster so I used a Mexican blend. I used a spring form pan which made the presentation nice. I wrapped the leftovers wedges and put in the frig to be reheated for breakfast later in the week. I liked the fact it had no crust Thank you!

Baked Kale Chips

These exceeded my expectation! I picked up a head of kale that was so big it had the whole seat compartment of the cart to itself! Lol! It worked out as they shrink quite a bit after baking. I agree with others that very little oil and salt is needed. I was surprised how gentle the flavor was from such a big curly leaf! Note: These need to be eaten the same day. I tried them the next day and it was like chewing on a rubber band.

Zippy Vegetable Chili

Just loved this! So easy! A wonderful dish to have available for a quick, healthy lunch. I used fresh salsa, 1 can Rotel and 1 can diced tomatoes and was very happy with the result. I usually have all these ingredients on hand and will definitely be making this again soon Thank you, Patricia!

Baked Oatmeal II

We enjoyed this very much. It's easy to put together for a healthy, quick breakfast to have on hand throughout the week. I poured a bit of milk of warm milk over it to serve. This actually made 10 serving, possibly 12. I used half the sugar and used applesauce in lieu of butter with a nice result. Next time, I will use half the salt. Very good! Thank you!

World's Best Potato Salad

I've made this twice now and really enjoy the creaminess of the sauce. My DD, who has always loved my potato salad, loved it, too!! I used Yukon potatoes and followed the recipe exactly the first time (I always add celery seed to my potato salad and followed the KL's advice to add it in her review). The second time I also followed her advice to add more cornstarch. The first time I overcooked it trying to get it thicker. The flavor was great but it had a grainy texture. I just added more mayo to smooth it out and it was fine. I also added more celery on onion, but I like it crunchy! Thank you, Kaye Lynn, this is my new "go to" potato salad!

Sensational Sirloin Kabobs

This was very good. I made a big batch of the marinade, cut several NY Strips into large chunks and put both in several ziplock bags in the freezer. Makes it easy to defrost, assemble and grill! The pineapple adds a nice touch. Thank you!

Backyard Cooper Burgers

I thought these were very good and moist. I scaled this to 1.5lbs ground sirloin but used 2T parm. I don't buy powdered garlic or onion so I added a bit of minced onion and used homemade garlic infused olive oil. Good stuff!
