Garlic Pasta with Prawns

Reviewed: Apr. 10, 2011
Wow, this was awesome! I followed the recipe, however used half the oil but added a bit of butter. I also marinated the prawns/shrimp in "Basil Shrimp" recipe on here before starting (use less dijon). This was wonderful and I wouldn't hesitate to make it for company! Even my husband loved it! Thank you!

Lepp's Marathon of Love

Reviewed: Apr. 2, 2011
Update: While sorrow wasn't an ingredient I expected to add, it seemed to work with the compassion every one else has added. Thoughts & prayers abound. / A wonderful recipe that offers comfort and love. Added just a bit more love! Thoughts and prayers to the Lepp family. Thanks, RGN, great recipe!

This was really good! I made this because hubs had dental work done and wanted something soft. Really pleased. I made 4 crocks (the kind with the tops by Corning). I put 2 in the freezer for another time. I followed the recipe only I used frozen mixed vegetables. Thank you!

Orzo with Parmesan and Basil

Reviewed: Mar. 23, 2011
Update I've been making this often as written except half the butter and family loves it! / I liked the idea of toasting the orzo first. I think it lent a nice flavor. Next time, I'll use 1/2 the butter. I didn't have fresh basil but was making a another dish with Simple Garlic and Basil Pesto (all pine nuts) and added 2 teaspoons of that instead. Yummy! Thank you!

Pesto Cheesy Chicken Rolls

Reviewed: Mar. 23, 2011
I had some Simple Garlic and Basil Pesto (made with all pine nuts) in the freezer I wanted to use. This was very good! I did follow some other's suggestion and didn't pound the chicken and put the pesto and cheese on top. I browned them first, put the pesto and cheese on top and finished in the oven. We enjoyed this!! Thank you!

Pierogi Casserole

Reviewed: Jan. 5, 2011
My husband loves pierogis. I doubled the potatoes and did follow many reviewers suggestion to mix the bacon, onion and cheese in with the potatoes. Made it a lot easier to assemble. I did save some onion and cheese for the top. Because this takes some time to make and it is very rich, I made portions for the freezer. I lined a casserole with foil, cooled the casserole, pulled out the casserole and cut into portions. I put the portion I want in a loaf pan to cook. Nice to have a quick potato dish for a side. Thank you!

Man-Lovin' Potatoes

Reviewed: Dec. 29, 2010
This was very good. Be careful not to overcook the potatoes in the beginning. I cooked a bit too far and they broke apart a bit. The flavor was still heavenly.

Prosciutto and Parmesan Pinwheels

Reviewed: Dec. 26, 2010
We really enjoyed these. I followed the recipe exactly. So easy to make ahead put in the refrigerator (I made two and put the other in the freezer). It may take longer, but bake until golden brown on top. Didn't experience greasiness or an OVER salted taste (prosciutto is a salty meat!). I used a very thin layer of mustard, one layer of prosciutto and a thin layer of shredded parm. We enjoyed them!

Basil Shrimp

Reviewed: Dec. 26, 2010
Update: I make this quite often. Recently I marinated and then followed "Garlic Pasta w/ Prawns" recipe on here. Holy cow, it was awesome!! ///I made this Christmas Eve as an hor' dourve for an Italian themed dinner. Wonderful! I followed exactly but I did only use 2 tablespoons Dijon as some recommended and it was perfect! I opened up my Cuisinart Panini/Grill flat and grilled them. I will definitely make these again or on the grill in the summer as part of an entree! Thanks!

Ooey Gooey Breakfast Rolls

Reviewed: Dec. 26, 2010
Oh my! This was wonderful! I was afraid as it resembles Monkey Bread and that always turned out mushy and undercooked for me. This was incredible! I made this Christmas morning and it reminded me of the wonderful little sticky buns our club serves and everyone loves! Thank you! My husband says this is his new favorite!!

Christmas Breakfast Sausage Casserole

Reviewed: Dec. 26, 2010
This was well received with the suggestions gleaned from other reviews. I used the maple sausage and some commented on how good it tasted. I used a couple more eggs, 1.5 cups half & half. I also used my Corning oval baking dish (3 qt?) so the egg mixture would be thicker. I used regular thick white bread without drying it out and it was fine. Very nice! Thank you!

Incredibly Cheesy Turkey Meatloaf

Reviewed: Dec. 10, 2010
I was pleasantly surprised with how wonderful this was! So moist! I halved this, it makes a lot and the whole recipe would have been too much for my loaf pan. Now I did goof but it didn't matter! I looked at the ingredients and because I add ketchup to my beef meatloaf, I just figured it went in the meat. I had already added a bit of A1 steak sauce and about a 1/4 cup finely minced onions so I just add a bit more bread crumbs and topped with additional ketchup. I also used shredded cheddar as that is what I had. I LOVED it! Even my husband who loves regular meatloaf enjoyed this enough to have leftovers the next night! Thank you!

Shredded Pork Sandwiches

Reviewed: Dec. 6, 2010
We don't generally eat pork but my husband can handle a pork tenderloin on occasion. Had one defrosted and kept having to eat out (holidays!!). I made this and froze it. Had sandwiches for dinner later on in the week and it was wonderful. I think my ratio of sauce to meat was more which worked out great, I loved the sauce. I would definitely make this again! Thank you!

Beef Tips

Reviewed: Nov. 30, 2010
My husband loves beef tips over egg noodles so I thought I would try this. I used reduced sodium soy sauce and brown gravy mix. It was very good but I will leave the salt out next time and cook it just an hour. Going to make a batch to keep some available in the freezer. Thanks!

Spiced Sweet Roasted Red Pepper Hummus

Reviewed: Nov. 27, 2010
Oh so good! I doubled this and followed the recipe. I made my own pita chips and also served vegetables. I had made it for an appy at a dinner I was having. A couple of friends stopped by and put a serious dent in it so I made another double batch. Nice and spicy without going overboard. Thank you!
