Heavenly Chocolate Mousse

a friend invited herself over for lunch so i needed something i could make in advance and not have to worry about it. i was skeptical about this recipe at first because of the water but went ahead with it because of it's great reviews. i substituted the 1/4 in the egg yolk/sugar mixture with milk for a creamier consistency and i used 1 cup of semi-sweet chocolate chips. wow! it's so good! next time i'll use all milk and a better chocolate!

Sarah's Banana Bread Muffins

these were pretty good but not very flavorful. i used just 1/2 a cup of sugar and added 5 small bananas, 1 tsp. vanilla and some cinnamon...still now enough flavor. these muffins get 4 stars because they're not dense. i have a favorite butter-filled banana bread recipe but sometimes it's just too heavy. i think by adding a bit more sugar than the 1/2 (maybe brown sugar) and some more spices these will be a 5 star

Pizza Dough I

this recipe results in a gorgeous, silky dough when the yeast is proofed, dough kneaded for 10 mins. and allowed to rise for an hour. i would've made it without allowing it to rise but the hubby was skeptical. i made a chicken alfredo pizza with it tonight and it's yummy! instead of red sauce i used alfredo sauce, some grilled chicken and cheeses.

Good Old Fashioned Pancakes

fanastic! this is the best recipe ever for pancakes! the flavor is great and it makes for nice, fluffy cakes (just don't overbeat your batter!)

Grandma's Lemon Meringue Pie

this was my first lemon meringue pie that didn't turn to liquid after it was refrigerated! it's so tastey that i ate it for breakfast! i did follow some of the other reviewers advice...I used 1 cup water and 1/2 whipping cream, 1/2 cup lemon juice and 1 tblsp. zest

Pumpkin Cake III

i used this recipe to make cupcakes (2 1/2 dz. exactly) and they were a huge hit. i added more spice to the cake with some 1 tsp. pumpkin pie spice and 1/4 tsp. nutmeg. i also reduced the oil to 1 cup and used 1/4 orange juice. i frosted the cupcakes using a pumpkin cream cheese frosting recipe i found on the country living magazine site. sooo good!

Quick and Easy Brownies

I prefer a chewier brownie so I reduced the flour like most suggested. Unfortunately, I was not impressed by these brownies. They were not very chocolatey (I added the last square of Bakers chocolate that I had along with the cocoa just because) and they were too cake like for me. I also found that they were a bit salty for me as well. The batter was a beautiful mousse-like cream and the texture of the brownie, when finished, was nice although the edges puffed up more than in the center. If I make these again I think I'd add chocolate chips and maybe try less egg (?).

French Bread Rolls to Die For

everything was going fantastic until i tasted them...they were bland but i think just a smidge more salt would be fine but the main issue was they came out dense and heavy (with weight). i could've thrown them through a window. it had to be something i did...maybe i needed to let them rise more?
