Grandma's Lemon Meringue Pie

Fantastic on the first try. I changed the serving size to 12 and it was perfect for my deep-dish pie plate. I whipped the meringue VERY stiff and the curd came out perfectly, as well.

Authentic Mexican Corn Bread

This is wonderful. We have to make it dairy-free due to food allergies, so we used 2 small cans of Cream of Coconut in place of the sweetened condensed milk, and Earth Balance in place of the butter, though we have used coconut oil with great results. We do not add the extra sugar, because we feel like it's sweet enough with the coconut cream. We also modify with one can of corn and 2 cans of cream-style corn. Very moist and rich, perfect for serving with soup. Sweet, with a good depth to it. I even ate it for breakfast a few mornings!

Easy Batter Fruit Cobbler

I made this twice, both times using freshly-picked strawberries. Once as indicated, and once adding the 1 tsp vanilla and 1/3 cup of cocoa powder. On top of that one, my three-year-old begged me to put about 1/2 cup chocolate chips on top. Both ways were VERY good- the chocolate one tasted absolutely sinful!

Banana Pancakes I

We always double this and we use a can of coconut milk in place of the milk (two kids with dairy allergies). Honestly, I think the coconut milk adds something to it that milk just wouldn't do! They are fantastic pancakes.

Delicious Pineapple Muffins

These are very good. They are actual muffins, as opposed to cupcakes in disguise. I made mine with half whole-wheat flour and they turned out very well. I froze them for quick breakfasts for my family. The inside was slightly drier than I would have liked (even before freezing), which I attributed to my use of whole wheat flour. I think I will add a small amount of applesauce next time to balance it out. The recipe made 12 large muffins, which rose up to nice crowns over the top of the muffin tin.

Whole Grain Pancakes

These are fantastic! My daughter is allergic to dairy, so we always replace the buttermilk with almond milk or coconut milk. They are delectable every time! We usually make homemade fruit "syrup" to go on top, with apples or strawberries.

All-American Flag Cake

Coming back to review this as a solid 4 stars. I knew it would be a horrendous idea for someone like me to try to cut a cake horizontally. Thus, I made two 9" round cakes to be stacked. This way does require a little more water mixed into the gelatin (try 3/4 cup instead of 1/2), and a little less pudding mixture (maybe half the batch), but I feel like it was a "safer" option for me...otherwise, I might have had to turn it into trifle! I poked both cakes with a fork and split the gelatin between the two. I always prefer to make cakes from scratch, but this recipe takes long enough without going to that trouble. It is definitely worth it to do the pokes- it looks neat and tastes really good. Also, I made whipped cream myself because I think the frozen stuff is gross- plus you can control the amount of sugar. Given that the cake is round and not rectangular, it obviously cannot take on the design of the flag, but I made a symmetrical design with all the items and you can tell it is supposed to be patriotic. Finally, I think this would probably be just as lovely without the marshmallows. If the cake is not eaten the first day, they begin to soak up the moisture from the whipped cream and they get mushy/slimy. Still tastes good, but with a strange texture.

Spanish Rice Bake

We loved this. I did alter a bit, since I'm pregnant and get heartburn from EVERYTHING!! I omitted the chile sauce, cumin, and cilantro. I also used two fresh diced tomatoes instead of canned. It's delicious- and it's a great make-ahead-and-freeze for after the baby comes. Thank you!

Zucchini Bread IV

I subbed 1/2 c unsweetened applesauce for half of the oil, used half white and half brown sugar, and added a crumb topping as suggested by a previous reviewer. It was amazing. Also, I even messed up the first batch because I had been using a 3/4 c measuring cup thinking it was the 1 c when I measured out the flour...but though it required a slightly longer baking time (and came out a bit wetter and eggier), it was still fantastic.

Ground Beef and Rice with Cheese

This does have a pretty nice taste to it. I made it for my husband and myself one Sunday night when we wanted something quick and tasty. We used ground turkey instead of beef and liked the way that turned out- however, I love cheese and I think next time I might ad twice as much. Just wasn't quite enough for me. Also, didn't fit in a 1 Qt casserole- I had to use my 2 Qt.

Toasted Pumpkin Seeds with Sugar and Spice

Awesome recipe! I must have done something wrong the first time, as it turned out more like seeds mixed with sugary crumbles (it tasted fine and hubby and I ate it anyway). But the second and third time I tried this, it turned out perfectly, with a nice candy coating on each seed. Sooo very tasty and seasonal!
