About this Cook
Hubby and I have been married since 9/07 and we have two small children. I'm an elementary school music teacher for grades K through 5 and lead a busy life. Sometimes it's hard to find time to make a good meal amidst everything I do, but I love to make healthy family meals and bake yummy things!
My favorite things to cook
I have found I'm good at all things baked, and getting better at stir-fry type meals and casseroles.
My favorite family cooking traditions
My German/Irish family pretty much slathers everything in butter. Unfortunately. Lots of Christmas and holiday casseroles and sweets.
My cooking triumphs
Manicotti & Shrimp Scampi. My husband loves them!
My cooking tragedies
Lasagna. I forgot to put on the foil once and the cheese was really burned. Also once I doubled my mom's potato salad recipe and accidentally miscalculated the salt. I added waaay too much and it was so sad to dump it in the trash!

Grandma's Lemon Meringue Pie
Fantastic on the first try. I changed the serving size to 12 and it was perfect for my deep-dish pie plate. I whipped the meringue VERY stiff and the curd came out perfectly, as well.

Authentic Mexican Corn Bread
This is wonderful. We have to make it dairy-free due to food allergies, so we used 2 small cans of Cream of Coconut in place of the sweetened condensed milk, and Earth Balance in place of the butter, though we have used coconut oil with great results. We do not add the extra sugar, because we feel like it's sweet enough with the coconut cream. We also modify with one can of corn and 2 cans of cream-style corn. Very moist and rich, perfect for serving with soup. Sweet, with a good depth to it. I even ate it for breakfast a few mornings!

Easy Batter Fruit Cobbler
I made this twice, both times using freshly-picked strawberries. Once as indicated, and once adding the 1 tsp vanilla and 1/3 cup of cocoa powder. On top of that one, my three-year-old begged me to put about 1/2 cup chocolate chips on top. Both ways were VERY good- the chocolate one tasted absolutely sinful!
