Best Ever Meat Loaf

I thought there were too many onions for the amount of meat used. And I had to drain a lot of water out of the pan after 75 minutes, then put it back in the oven for another 10 minutes. I also didn't care for the added sweetness from the shredded carrots. The overall taste was fine. I think it would be great with less onions and no carrots.

Crescent Bacon-Cheddar Pinwheels

They were edible. My husband thought they were ok. I didn't care for the taste. Hot ranch dressing seems odd to me anyway...

Stuffed Pork Chops III

I used turkey chops, and only put the stuffing on the thicker side. It wasn't easy slicing and stuffing them, but so worth the time and effort! I used onion powder instead of onions to save time, and also a packet of Splenda instead of the sugar. These were great! My husband ate two. And both of my very picky children asked for more. (I didn't put the stuffing in theirs. The bouillon and extra flavor from some of the bread crumb stuffing that fell out flavored theirs nicely.) I will make this again.

Slow Cooker Chicken Stroganoff

I used lowfat cream cheese and 99% fat free cream of mushroom instead of the cream of chicken. (It was all I had.) It turned out great! The key to this recipe is making sure your chunks of chicken are large. Mine were too small, and by dinner time, a few of the chicken pieces were hard. (but still tasty) My husband ate til there was none left!

Chicken Curry III

Not bad. I added mustard seeds, turmeric, curry leaves (using less of the powder), and a can of Rotel. We really liked it. We're picky about our curry, too.

Balsamic Roasted Red Potatoes

I thought it was a bit too vinegary. But the potatoes still went over very well at our Mother's Day dinner. Next time I'll still use the vinegar, just a bit less of it. I also used Yukon Gold potatoes because I didn't have any red ones on hand. Pretty good, overall.
