This recipe is fantastic! My husband couldn't believe how delicious it turned out. My son is dairy free and I used rice milk and Smart Balance light as substitutes for milk and butter. I've made it several times, both with or without the garlic. I like to make it without because it is good with honey for dessert. Also, I did follow earlier posted advice and add some baking soda to the recipe to get more pillowy, bubbly bread.

Egg Noodles

Really delicious egg noodles! I used rice milk and Smart Balance Light in place of the milk and butter to make it dairy-free. Once and a while I throw and extra yolk in or two. Delicious, simple, and a lot less expensive than fresh store bought!

Jay's Signature Pizza Crust

This recipe is awesome! It is dairy-free and very versatile! I've used this with extra flour and rolled out thinly for a crispy, thin crust. I've also made it hand tossed style and deep dish! So good- and after we've ordered pizza lately I've wished I had just made this because it is just better!

Fresh Pasta

Delicious! I recommend starting out with less flour for the well, though- maybe 4 cups and add more if needed. I always end up adding more eggs because it is too dry.

Best Brownies

These are really delicious brownies. I used Smart Balance Light spread to make these vegan and they were absolutely delicious. I didn't make the frosting, but I added some dairy-free chocolate chips and chopped almonds to the mix.

Sophie's Zucchini Bread

This zucchini bread is so good! I doubled the recipe and used 1 cup of berry flavored applesauce and 1 cup of melted (and cooled) Smart Balance Light Spread instead of oil. I used 3 cups of white sugar and 1 cup of brown sugar. I also added some nutmeg and raisins. Really delicious- even my son with autism who is VERY picky and never eats vegetables gobbled these down.

Double Quick Dinner Rolls

These rolls are delicious! Changes I made: I used Smart Balance oil, garlic powder as others suggested. I also used flour until it was a dough consistency, so it wasn't something I "spooned" into the pan. It took a little longer for them to rise because of this, but they were really delicious. I will definitely make again. Thanks!

Mom's Zucchini Bread

This bread is really good! I made what could have been a horrible mistake when I set the oven to 425 instead of 325. I'm glad I checked on it at the 35 minute mark, they were done and cooked all the way through. I used a little extra zucchini, just because I already had it shredded. I used coconut oil. Thanks for the great recipe!
