Brooke's Best Bombshell Brownies

These brownies have become known as "THE Brownies" within my group of friends. The recipe is fantastic on its own, but I discovered something great. Instead of a 9x13 pan, I use a 9x9 pan. You will have to cook them longer, as this batter is already quite thick, and now in a smaller pan so it's not spread as thin. Depending on your oven, it may take 15 or 20 minutes longer. The result is a brownie that is crispy and lightly crunchy on the outside, but warm and fudgy on the inside. Just make sure to keep checking them with a toothpick in the center - the moment that toothpick comes out clean, grab em and throw them on a cooling rack! You won't be disappointed.

Crispy Herb Baked Chicken

This was delicious! The soon to be hubby and I are on a low-fat diet (Alli plan) and so we are always looking to spice things up, but stay healthy. We used Eat Well Stay Healthy thin sliced breasts. Reduced fat grated Parmesan. Smart Balance low fat butter. There wasn't a piece left amongst ourselves and our roomie. Next time I'll be better prepared and try coating the chicken with non-fat buttermilk instead!

Cheese Fondue

This was a big hit at my party! The nutmeg is so key, and I used to hate it so I was very tempted to leave it out. I'm so glad I didn't! I'll definitely make this one again and again, I've already done it twice! PS- Thanks to the reviewer that gave us a heads up about tossing the shredded cheese and flour before adding it to the pot. The first time I had not done so and found many lumps in my fondue. The next time I had a much better consistency.

Awesome Slow Cooker Pot Roast

Very good and simple recipe. Kudos! Now, I'm still a beginner so I'm sure this was my folly, but even with my additional flour the gravy was still quite thin. I'll probably cut the water (or beef broth in my case) in half next time. We'll see if that does the trick, as I'll definitely make this again!

Monkey Bread I

This was a fun treat for our guest that came to visit. I had my doubts about Monkey Bread in general, as I've never tried it - only heard of it. However, this was an easy and fun dessert/bread to make. I followed the recipe to the "T" and should I ever decided to make it again, I'll do so just the same. Clear and simple directions. I used a Bundt pan, rather than tube. Seemed to work just fine.

Becky's Chicken Salad

This was a lovely little recipe. I made it tonight, but first pan fried three skinless, boneless breasts with butter, garlic powder, onion powder, and some Zatarains seasoning. (PS- I'm from Louisiana) Once cooled and chopped up, I added it to the ingredients listed (sans the grapes and almonds since I like neither). Had I put more forethought into it, I would have also left out the salt suggested as the seasoned chicken was salted enough. I will definitely make this again. The whipped cream was an excellent move for chicken salad.
