Fried Rice I

An easy recipe for fried rice!! Pre-cooking and chilling the rice helps it from getting mushy. I used coconut oil in place of veg oil and bacon grease. And a surprising {easy} alternative.... I substituted crumbled (real) bacon bits! It's not my cooking style to use anything like this, but I had them left over from a school fundraiser and found myself out of bacon when I went to make this recipe.... so I took a chance and WOW!!

Savory Slow Cooker Beef Tips

What an easy slow cooker recipe! (and a great way to use up stew meat!) Moist, tender meat with plenty of gravy. I followed the recipe with the exception of the ginger ale and fresh mushrooms as I didn't have any. I sub'd sparkling soda.... figured it'd be similar! And I bet the yummy mushrooms would make it even better! I served it over buttery mashed potatoes. A keeper for our busy family of 6!!

Broccoli Chicken Casserole I

The stuffing topping wasn't our favorite since it remained crunchy. I may use this recipe as a baseline and tweek it to our likings, but I always like to try it as is and review it as is first!

Lemon Cream Pasta with Chicken

Great, quick meal!! I did end up adding a tsp or so of corn starch to thicken the sauce.... but I think that might be personal preference. I was leary since it didn't have all the extra goodies that we usually like... peppers, broccoli, etc. but it was tasty as is! And I'm sure could be modified to include veggies for a spin-off if you have them on hand! This one will be a keeper for us!

Chicken Zucchini Casserole

I was excited for this recipe, as it used many of the ingredients I had on hand. I'm sad to say I won't be saving this one... BUT for those willing to give it a shot (as we all have different tastes), I'd reccommend sauteeing the veggies prior to mixing it all up. Even after 45 minutes, they were still crunchy (not even close to 'al dente'!) which made the onion a VERY strong flavor in the dish. Any longer cooking in the oven would have dried up the dish too much. I used 3 medium carrots (thinly sliced), which was even a bit shy for the veggie ratio, so I'd suggest either upping the amount as I did or adding other vegetables that you have on hand! Overall, a very easy dish to prepare, and worth a shot to have something a bit different!

Strawberry Yogurt Scones

I make these often...especially when I need a quick treat for morning coffee! I reccommend 2-3 tsp baking powder, a whole yougart (8oz), and adding chocolate chips! They don't have a strong strawberry flavor, so any yougart is great to use! They are best served warm, not left over...

Cheesy Potatoes with Smoked Sausage

SUPER EASY! ...But not a great hit with our family. We used cubed potatoes, which I think was much better than hashbrowns would have been. It was lacking something... can't quite put my finger on it! The sausage's smokiness overpowered the blandness of the cheesy potatoes. It worked great since I had the ingredients and needed something quick, but I'm not sure we'll resort to this recipe again.

Chicken Enchiladas II

Super easy, quick, dinner option! I exchanged the green onions for sauteed sweet onion, I ommited the green chillies (I have young kiddos), but added corn and topped with a small bit of fresh cilantro! Oh, and used corn tortillas.... much more traditional mexican dish! It was a hit!! Yum!

Salsa Chicken and Potato Packets

Super Star for ease of preparation and cleanup, but it's not an amazing dinner option for flavor. Quite bland. My chicken overcooked while the potatoes were a bit firm. (and I used large chicken breasts!) It's one I might try again maybe spicin' it up a bit or adding shredded cheese!
