Blueberry Pigs

As another reviewer pointed out, this does look like a pie that's been dropped on the floor. But it is tasty nonetheless! I used strawberries rather than blueberries, plus a dash of lemon zest. I was worried about the strawberries making it too runny, so I mixed the berries, zest and sugar, then let it sit in a bowl for 30 min. I drained off the excess fluid, spread it onto the crust, then made my husband roll it up for me. I read the reviews saying it was hard to roll so I wasn't taking any chances. It rolled up very nicely. Mine baked for about 40 min, and I served it with vanilla ice cream. Yum! Will definitely be making this oozing splat of goodness again.

Cheesy Ham and Asparagus Bake

My husband is suspicious of anything quiche-like, but he enjoyed this! I did make a few tweaks; I left out the tarragon and added a tsp of garlic salt and a tsp of a mixed spice the hubby loves. I forgot to add the black pepper. I sauteed the onions/bell peppers in butter and garlic powder. The spicing turned out very mild, which I thought was OK but my hubby added more to his piece (hey, I'm not complaining, it was quiche and he LIKED it). Next time I will add some fresh minced garlic in addition to more of the other spices. And remember the black pepper.

Coconut Oatmeal Cookies I

I like these cookies, they just didn't have much flavor without tweaking the recipe, and they were too sweet for my taste. I used sweetened coconut cause I couldn't find unsweetened (darn you, podunk grocery stores), and cut the white sugar to half a cup. Next time I will use unsweetened coconut AND cut the sugar. I also threw in some dark chocolate chips (which were good), but next time I will use white because I think the flavor will be more complementary. I didn't have problems with flattening, mine came out soft and pillow-y. I made the balls a heaping tsp, and baked for 8min 30sec to 9 minutes. My oven timer goes by minute increments only so the 8 min 30 sec chained me to the kitchen in perpetual count-down mode. But leaving the kitchen with cookies in the oven gives me separation anxiety anyway, so it worked out fine!

Peanut Butter Cookies IV

I tend to micro-manage my baking, I follow recipes exactly, measure painstakingly, and never leave the kitchen when something is in the oven. I have to be there for my baking in case anything happens, like spontaneous oven fires (none so far, but I have set MYSELF on fire. But that's a whole other story). I followed this recipe exactly, but threw in choc chips. Actually, I gave each cookie precisely three chips. I long to be the 'splash and dash' kind of cook, but... The cookies survived my heavy handed directorship, and turned out delicious! After experimenting with baking time I found 8 min to be perfect, soft but done. I also reduced the oven temp by 10 degrees, but only because my oven is an over-achiever where heat is concerned. The recipe is easy and fast enough to whip up for sudden sweet cravings. Usually when I bake the aftermath is visible for days after, but these are bake-one-day-gone-the-next, and part of me is left wondering if it ever really happened. Then I notice my belly straining my pants and I know it was real.

Beth's Spicy Oatmeal Raisin Cookies

I was really pleased with these cookies! I followed the recipe, accept I cut the baking time down to 8-9 minutes. This kept them soft, which I prefer. I made them five days before Thanksgiving, then instructed my husband to stay away from the cookie jar so we would have some for the holiday. The cookies were just as good after five days!
