Berry Shortbread Dreams

This recipe is easy and delicious. I made it last Christmas as gifts and I got tons of compliments. They are even good without the glaze if you are in a hurry...I would definitely make again!

Easy Decadent Truffles

I make these truffles every Christmas. This recipe is great because it makes so many in one shot. I always coat them in melted chocolate after I make them. This year, I made four varieties (1) classic - dipped in chocolate and decorated with chocolate sprinkles (2) almond - I rolled the truffles in ground almonds then coated with chocolate (3) toffee - I rolled the truffles in Heath toffee pieces then coated in chocolate, and (4) white - coated in white chocolate. These are great for Christmas gifts. Make them small as they are very, very rich!

Baked Beans, Texas Ranger

My husband and I made these for a large group while camping. We simmered the beans over a campfire and served with pulled pork sandwiches. These beans were delicious and we barely had any leftovers! The leftovers we did have we served on top of hotdogs the next day, delish! One thing to note is that we couldn't find the right kind of pork sausage when we were shopping, so we used bacon ends instead. Turned out great!

Empanadas

I made these as a dessert for a Mexican bbq I went to...filled with Mango jam these are to die for. I made some filled with apple pie filling - they weren't as good. The dough is very soft and flaky out of the oven, these go fast!

Crustless Spinach Quiche

I made this for a brunch. These were really easy to make and turned out great. I used parchment squares instead of muffin cups to give them a more professional look. They were a hit!

Foil Wrapped Veggies

Lemon Cake with Lemon Filling and Lemon Butter Frosting

I have to agree with the other reviewers. I made this cake and it just wasn't very good (the cake portion) - so the next day I bought a vanilla cake mix, and made it again (using the cake mix as a substitute) and it was a huge hit - I will make again, but I will use a different cake recipe!
