I make these truffles every Christmas. This recipe is great because it makes so many in one shot. I always coat them in melted chocolate after I make them. This year, I made four varieties (1) classic - dipped in chocolate and decorated with chocolate sprinkles (2) almond - I rolled the truffles in ground almonds then coated with chocolate (3) toffee - I rolled the truffles in Heath toffee pieces then coated in chocolate, and (4) white - coated in white chocolate. These are great for Christmas gifts. Make them small as they are very, very rich!
