Sweet Potato Pie I

I've been using this recipe for nearly ten years. I've made several versions over the years. My favorite is to substitute the milk with heavy cream (in the carton). For the sugar, I use half white sugar, half brown sugar and I add a teaspoon of brandy (my preference) or rum (if I don't have any brandy), and a 1/2 tsp of vanilla extract. I usually make about four pies every time because friends steal whole pies when I make them. Tip: To avoid stringiness of sweet potatoes, use a hand mixer, and remove the strings on the beaters and discard. I usually add an extra small sweet potato to the recipe to compensate for the stringy potato I will discard from the beaters. I hate strings in my pies.

Southern Pimento Cheese

Great recipe. I was hesitant to use extra sharp cheese because its so strong by itself. But once I made it, I was glad I had. The extra sharp cheese adds zing. It would've been bland without it. I didn't change a thing, made as directed. Will make grilled sandwiches and tea sandwiches with it.

Italian Pasta Salad I

Great starter recipe. You can add anything basically to this recipe. I added cucumbers, capers, yellow bell peppers, mushrooms and artichoke hearts. It was a crowd pleaser, especially for the vegetarians at our get together. Very important to make sure to chill ahead so the flavors mesh.

Chicken Rice Casserole

Great starter recipe. I added broccoli, cauliflower, and corn. I omitted the watercress and celery. I used cream of chicken soup and cream of mushroom soup. Added a splash of of chicken broth, omitted the mayo. Added some garlic powder, Italian seasoning, black pepper and dash of Cajun seasoning. I also used panko bread crumbs instead of saltines. And topped with sharp cheddar cheese. I also baked some chicken drumsticks separately til almost done and then transferred onto rice before adding panko bread crumbs and cheese. Then cooked til bubbly.

Broccoli Rice Casserole

Did some tweaking. Added an additional can of cream of mushroom soup. Use milk instead of water. Mix all ingredients in one 5q pot to minimized dishes used. So I sauted onions, then added rice and water. Let cook. Added broccoli after rice done. So it helped thaw out frozen broccoli. Added mushroom, cheese and milk in bowl and microwaved til bubbly. Added salt, pepper, parsley & pinch of garlic to bowl. Then pour mixture into pot and mixed thoroughly. Poured into 9x13 pan. Baked as directed. Added shredded cheese to top last 10 mins of cooking. I had a lot leftover in pot which made enough for a 8x8 pan. I think the directions given were not accurate or specific enough, this is where it loses a star for me. Great as a starter recipe though.

Round Steak and Gravy II

I loved the recipe. I did alter it. I seasoned it with steak seasoning, tenderized it with a meat mallet, dredged it in flour, I fried my steak in a half of inch of oil for 3 mins on each side. Then pat dry excess oil off. Then placed in casserole dish, I then mixed two cans of mushroom soup and 1 jar of Heinz savory beef gravy in a bowl. Stirred and mixed well, I poured it over the meat in cassorole dish. I cover with foil (couldn't find my casserole top) and baked on 350 for 1 hour. Came out very tender, like country fried steak. Served with rice and used the extra gravy to pour on top of rice. Delicious. Thanks for the mushroom soup & gravy combo. Much easier than gravy from scratch and thicker & richer than gravy in a jar.

Golden Rum Cake

Loved the cake. I've made it several times over the year. Some variations I've tried that came out great. I used coconut cake mix, with coconut pudding mix and Malibu coconut rum in cake and glaze. Came out great. I used orange cake mix, with vanilla pudding mix and tropical Malibu rum. Came out great. I tried substituting malibu coconut rum in cake and glaze with no other changes. Came out great. Never tried using the regular recipe as of yet. Will try one day I suppose. Overall, this is a wonderful recipe that you can do amazing things with. Love it!

Stuffed Cabbage

I followed the instructions. I did alter it a little. I added ground chicken, deer sausage and ground beef. I also added extra garlic, black pepper and salt. I opted to bake it instead, b/c of the reviews. But the rice came out hard. The meat portion was delicious and flavorful. But it was hard to get pass the hard rice. I had to bake it for 1 hour and 30 minutes. Next time I will opt to use minute rice like someone suggested. Good starter recipe. Would've given five star if not for the hard rice. :-(

Cola Pot Roast II

Great recipe. I added a teaspoon of worchestire sauce and place two cloves of garlic in for aroma and added taste. It was great and so easy. I used my roaster oven and it was a hit. Thanks for the recipe.
