Hash Brown Casserole II
The original version is good. However, I prefer the suggestions others have made. I use cream of mushroom soup instead of cream of chicken and I omitted the cornflakes. Not a fan of cornflakes on my hash browns. Instead I sprinkle shredded Parmesan on top. I personally made the following substitutions and additions. I used a pkg of pizza shredded cheese; it is mozzarella, cheddar, Parmesan and cream cheese. I used Obrien shredded hash browns; it comes already thawed, and with onions, green and red bell peppers already in it. I omit the salt. And I add breakfast meat, usually bacon, sausage and diced ham; or one of the three depending on what I have available. Sometimes I add red pepper flakes or diced jalapeƱos if I want it spicy and flavorful.

Sweet Potato Pie I
I've been using this recipe for nearly ten years. I've made several versions over the years. My favorite is to substitute the milk with heavy cream (in the carton). For the sugar, I use half white sugar, half brown sugar and I add a teaspoon of brandy (my preference) or rum (if I don't have any brandy), and a 1/2 tsp of vanilla extract. I usually make about four pies every time because friends steal whole pies when I make them. Tip: To avoid stringiness of sweet potatoes, use a hand mixer, and remove the strings on the beaters and discard. I usually add an extra small sweet potato to the recipe to compensate for the stringy potato I will discard from the beaters. I hate strings in my pies.

Southern Pimento Cheese
Great recipe. I was hesitant to use extra sharp cheese because its so strong by itself. But once I made it, I was glad I had. The extra sharp cheese adds zing. It would've been bland without it. I didn't change a thing, made as directed. Will make grilled sandwiches and tea sandwiches with it.
