Cheesy Zucchini Casserole I

This is a solid recipe, but nothing over-the-top. I like that it is a well-rounded side, meaning it's a veggie and a starch so I don't need to make two sides. It's easy to prepare but does take a long time to bake. I used whole wheat bread, but I think white would've been better. I'd make it again if I had zucchini to get rid of.

Lemon Corn and Zucchini

This was delicious. I can't give five stars though because instead of dill (didn't have any) I used one clove of garlic. It was delicious! Lemon and garlic mixed perfectly with the veggies! Also used corn fresh off the cob.

Fish Tacos

For how quick, inexpensive, and easy these are, they are delicious! The only thing different I did was add thin-sliced red onion. The lime wedges say optional, but they are necessary! I also used really hot salsa, as we love spicy! This is going into the rotation.

Italian Pesto Pizza

This was great. I followed the recipe as stated, then added caramelized onions and sauteed mushrooms. Delicious blend of flavors between the pesto and mozzarella. Yum.

Banana Wheat Muffins

These were really good. I put a tiny scoop of peanut butter in the middle of each one, so that probably made them taste a little different. I love whole wheat flour, the texture is delicious - and so much healthier. They were moist too. I'd make these again.

Mom's famous chili

This chili recipe is great! I used a can of "spicy" V-8 as we like hot chili and it was just perfect on a cold day! The green peppers make a huge difference as does the bouillon cube and chili seasoning packet... All my guests loved it. This one's a keeper!

BBQ Chili Pasta

This was good but to be honest, I made so many changes I feel like it's almost* a new recipe. I added about 3/4 cup salsa, doubled the meat, reduced the BBQ sauce to 1/2 cup, added black beans, and one can tomato paste with one can water. It was flavorful and salsa + BBQ sauce mixes well believe it or not. I feel like if I had made it to the recipe, it would have been too dry. My husband liked it too.

Margarita On The Rocks

I actually multiplied this recipe to make 16 servings and pre-made it in a giant pitcher for a football party, then just poured it into ice filled glasses. I used Diet 7-Up and frozen limeade concentrate, which I mixed with 4 cans of water before using for the margaritas. It's very refreshing and light, and sure packs a punch! It makes a strong drink, but that's how I like it! I live in Arizona, so I went to the backyard and pulled limes off my tree and squeezed a fresh lime into each glass, YUM!

Peruvian Arroz con Pollo

I made this with skinless, boneless chicken breast and two Serrano peppers (which was the perfect spiciness for us). My husband and I really liked it. It was flavorful without being overpowering and the cilantro and orange juice combination is delicious! I would make this again for sure.

Wonderful Meatloaf

This was OK. Had flavor, but it was really dry. After reading previous reviews I added an egg, and it stayed together well enough. I probably would try a new recipe before making this one again.

Mexican Pasta

I didn't find it liquid-y enough to coat the pasta noodles, so I added 3/4 cup of chicken broth and 3/4 cup of sour cream. Also added red pepper chips, ground beef and shredded cheese. Overall, I liked it.
